Thanks for the Recipe, I tried it last night. The only change I did was added some Chilly powder and some red pepper flakes to the chicken, tossed it with medium heat for 5 mins, we like a bit spicy, and it came out amazing - thank you (thumbs up from me)
That’s exactly how I make chicken enchiladas with one exception, I add small diced onions to the inside of the enchilada with the chicken and cheese. Yum! So good!
I hope this video gets over a million views like another received despite her recipe was barely seasoned. I can tell that this recipe has flavor and worth trying.
@@MishC619 I used flour tortilla, so I guess I don't have to toast them, I just rewatch & realized it was corn tortilla that's why she toast them, thanks for pointing that out, I might have to try the flour tortilla & see if it's necessary lol 🙂

One thing I wanted to say is thank you so much for letting viewers know to save the broth made from boiling the chicken to use for other recipes. I have seen so many cooking videos where the broth just discarded and it drives me insane. Thanks for sharing your recipe and inviting us into your kitchen.

Liz, I think you mean Mexican or Tex-Mex oriented. Spain is on an entirely different continent. It’s like attributing Great Britain for cooking American 🇺🇸 recipes. Same language doesn’t equal the same culture or country.

When cooking the chicken, instead of boiling the breasts, you just bring them to a boil and turn off the element and let them sit. That way they dont overcook and dry out.

try putting aluminum foil on for 10 mins after baking uncovered the cheese around the edges will scrape right off the sides of the dish its the best part 👍
