After pulling the fatline outta the tail, I usually like to stuff the cavity with a mixture of breadcrumbs, spices, garlic, minced onions, minced bacon and a "splash" of bourbon. Trussing the tail will keep stuffing locked in place and will make the tail meat extra moist. Mmmmmm

My entire family was born and raised in Florida. About 15 years ago, my cousin’s husband was working as the road kill guy. He brought home a gator that died while he was on site. I swear, to this day, that was the best cut of meat I’ve ever eaten in my life! He smoked it for hours and it was spoon tender!
