This is awesome. I love that people are, in a sense, moving backwards to doing things the old world way. People need to see more of this. Tear down the industrial food system and bring back the local craftsmen (and women) who feed each other locally and sustainable just like humans have been doing for thousands of years before industrialization.

A thoughtful video and wonderful butchery. Local, sustainable and skilful. More of this please! Diet choices are personal and it is good to have this type of butchery as a low-waste, low-transport option.
It’s a sad commentary about RU-vid and the state of our country when you have to declare at the start of a video about a butcher shop that no animals were killed on the video. We’re so detached from the source of our food that it’s pathetic. I have no doubt that in the future you’ll have to warn people before you show a video about harvesting (killing) vegetables.
To me, the heads up makes it easier for their message to reach people, as a smart business move. I probably wouldn't be watching it knowing that I'd see that happen on camera. But I am interested in supporting local butchers, so the message at the beginning encouraged me to watch it.
As someone who gets half a cow each year, this was a great video. I always just take the standard cuts, now I have some knowledge to ask for some different cuts next year. We have a bunch of local butchers around us, which is a blessing! It isnt much more than the grocery store prices nowadays. Farm to Table , while it's a trendy phrase...it is an amazing thing quality wise, especially when you get to know the people running it.
Butcher shop should make some Cornish pasties using outside skirt steak absolutely delicious. Would also recommend scotch egg and I imagine they would sell..
I can't wait until there is a butcher in every town. The kind of butcher who cares about less waste and educating the public on everything an animal has to offer. I love seeing the step between farm and consumer.
There used to be a butcher in every town, then the global market made it impossible for the local butchers to compete. Over the last year and a half, people have rediscovered local meat sources due to breakdowns in the supply chain. I sincerely hope that a butcher shop opens in every town again! At this point, appointments to get an animal butchered are a year out.

Just came across your channel . Really good vid . This shop was hear . Really like this butcher because he shows us so much and utilizes every thing . I still can remember my parents talking about sweat breads . They are the kidney of some animal .I believe are parents where healthier not because they ate alot of meat but because they ate different parts .dear heart is good . Very rich . But good . "So why is whole animal butchery a rare thing?" Because we rely on someone else supplying our meat, and there is no way a small shop could supply enough to the masses.
Wow this is a really great video. Very informative and I am glad this butchery does not waste food. Buying local and serving their community is what it is all about.
More people need to be familiarized with this process. I believe it would create a really needed connection to our food and really deter the factory farming of animals.
As none of the meat is intended to be consumed raw, the act of cooking or smoking should pasteurize. He runs a clean shop far cleaner than the local commercial butchers.
I found that disturbing as well, and that they were not wearing beard nets. I worked for a small butcher in Grand Rapids, Michigan for a little over 3 years and we were required to have gloves and change them frequently, along with anything to keep hair out of the product (hair and beard nets, and having.all long hair tied and but under a net or hat).
Just the idea of eating these poor animals is extremely foreign - and sad - to me. They want to live, just like us. There are plenty of options for us to get nutrition eating vegetables, grains, and legumes - yes there is plenty of protein in all of those. If you don't feed massive amounts of our food to the animals just so you can eat them, we can avoid the looming climate catastrophe. That is actual sustainability.
The idea of eating animals is extremely foreign to you? Most humans that have ever existed, have consumed meat. We can't eat grass. All the cows they butcher, are from local pastures. Whatever you are eating -was probably raised with petrol fertilizers, sprayed with pesticides, combined processed (along with all the critters), had the earth tilled to nothing, processed in a factory, then eventually trucked to you. These people should be commended as a model of how we can get away from the operations that do real harm to the planet.
@@wolfbirdhomestead600 Instead of grass pastures we could put in orchards and permaculture food forests. That is so much more efficient. Just because Monsanto exists and other ridiculous ways of growing gmo processed foods, doesn’t mean all plants are trash and meat is better. Eating animals is the most sadistic/dumb way to get nutrients one could imagine. Vegan for the win
Cows actually are really healthy for the land and done right will not harm but nurture the land . Cows were never meant to eat grain . It's the global industries witch changed it and not for the good . Land is going to wast because we do not cultivate it with cows and buffaloes .
@@rd4660 thanks for your reply. I’ve been 100% plant - based since 2012 when I had my stomach cancer treatments and surgery. Yes, it’s a personal choice. If I sounded preachy, I apologize. It was more of a recognition of the health benefits. I don’t subscribe to the highly sensitive environmental aspects. Too big picture for me… we (the public) really don’t get the correct information needed to make that call. I’m little picture- I’m still here thanks to leaving animal consumption behind.
