I own the 10.9 M1 iPad Air. Didn’t need the “pro” features. You are correct on size/weight. The form factor REALLY hits on all marks for me. Plus the M1 chipset is ridiculously powerful.

I just bought a new iPad Air gen 5 with 64gb. I'm going to return it and buy a Pro gen 3 11" because of the 128gb, 120 refresh rate is more like my phone and the brighter screen is better for outdoor use.

I would definitely go for the M1, it's gonna be cheaper than the M2, if it's like a 50 buck difference go for the M2 though. But the Air 5 would be out of the question for me since it doesn't have 120hz

Get a MacBook for editing. You will be much faster with that. There is no point in using an iPad as a main editing machine, you have limited software, with clumsier options.
Should I buy an Ipad pro 11 (2022) or wait for next ipad pro with m3? I have no urgency and Only need it to try RE4 and other console games that are coming to it. Also do you know when will the Ipad pro m3 launch ?
I would wait for the M3. Since they should be upgrading the 11' to have the same great display tech as the 12.9'. Also it should be getting a redesign with hopefully moving the front-facing camera to the correct side. In terms of the date. I think you could expect it somewhere between march and may 2024. If they don't launch it in 3 days at the event.
Would go for the 2021 iPad Pro, if your budget can stretch it. This would future proof you till the end of your school days. If not, an M1 MacBook Air is still sick. But I feel like the iPad would be a better choice for the convenience of note taking.

It doesn’t matter. Ipads with M chips will stay overpowered forever. Apple has proper lineup of devices and they will do everything to make sure these don’t overlap. Can you name 1 significant feature that brought the ipads closer to macbooks/laptops or a feature that takes full capability of ipad as a tablet since the time they were introduced?
speaker is better , laminated display is better but thats not a deal breaker for most of the people but after using 120hz , 60hz feels slow . That's why his point makes sense. Another deal breaker will be the base 64 gb in other ipads .
