So I bought really nice piano vst on my Mac, and I just want to use my piano as a midi controller and output the sounds from my Mac to a nice pair of speakers. Do I still need an interface if it’s just for audio output?

what kind of audio interface ''speeds things up in your DAW'' ? Is it something new ? Because audio interfaces are basicaly just Digital to analog and analog tovdigital converters. They don't speeds things up, they don't improve the quality of the sound your DAW outputs when you are exporting audio. Your DAW don't need any audio interface or any sound card to export audio. it is not 1980 any more, we don't record our music on casettes. the digital 'signals' go from memory to cpu to ssd. Some fancy audio tool will actualy make use of a graphic card GPU to accelerate audio rendering. But GPU are expensive and the use cases are rare. To improve speed you are better off upgrading your cpu. Get as many cores as you can. And get an audio interface if you want to record audio.

Its because these old heads just want us to dump money into their company. Audio interfaces are expensive as hell for no reason when u can literally use free sound effects on ur mic to make it sound clearer than any audio interface could ever do

So if I dont need to record guitars or vocals there is not advantage for me to buy an Uad apollo over my actual focusrite saffire 6 usb,right? or will I get better sound coming to my speakers from ableton?

There is some advantage, although it would be harder to justify the price increase if not making use of the inputs. Focusrite make well-built interfaces with quality audio and the Saffire 6 is no exception. With the Apollo you get extra processing power which means less latency, some extra features here and there and a strong plug-in suite bundled in. The components are a step up in quality which in theory produces a better sound. However, the likelihood of that difference being particularly noticeable, or making much difference to your productions, is somewhat negligible unless you're in a fully treated studio with some pricey studio monitors. Acoustic room treatment and/or a studio monitor upgrade would improve audio more helpfully and noticeably.

Is this why I get latency from my controllers to my headphones when I mix them ,cause I don't have one ,I've just started using controllers

In your case there are few things that may cause that. Most controllers actually have their own 'interface' or 'soundcard' built-in which handle the requirements no problem. It's worth checking your preferences/audio settings that you have the internal soundcard of the controller connected. Also are you using wireless headphones by any chance? Bluetooth headphones are generally not recommended for DJ use as Bluetooth isn't a particularly fast connection and does introduce latency.
