What makes honey crystallize? Is it old? Is it still edible? I had the same question so I started digging around for answers.
If you have honey that has crystallized you can put the jar in hot water and let it sit for awhile and it will liquify again.

Interesting video. Honestly i preffer honey that do crystalize, but it's because it's simpler to handle. Basicly it's just harder to spill and make mess with it, and that was reason i looked it up.

We are beekeepers as well. If the honey does crystallize and consumers do want it to stay liquid longer, adding 1 or 2 drops of distilled hot water to the honey while it's warming. This will extend the time to crystallize, but will not eliminate it. Also, if you do not know whether the honey is higher in fructose or glucose, ask the beekeeper what the dominant crop around his/her hives is. For example, canola honey tends to crystallize very quickly, and can even be a bane for beekeepers because it can clog up frames if not extracted early. That said, if your honey comes from a fruit orchard environment you can be almost guaranteed that the dominant sugar will be fructose. Dave is right about temp too. We often take a sample of previously crystallized honey that ended up with a beautifully smooth texture and add it to freshly bottled honey. The crystals will form in line with the 'seed' honey, and we do not need to worry about temperature as much. We know the crystallization for that batch will be more controlled and uniform. Buy local! Buy a trusted source! Ask advice from the beekeeper about storage and use. Thanks Dave!

For someone with Rheumatoid Arthritis it’s best that it stays gooey 🍯 but my husband likes to buy a huge pot from local honeybee keepers. I came to RU-vid to check how I can melt it, it’s hard for me to scoop out. Blessings to you, yours and to the 🐝 bees

I know. I have mild arthritis in my fingers. Oddly enough when I get stung on a joint that is arthritic the arthritis pain eases for a few days. I looked this up and it's called apitherapy. Thanks for watching

There is a thing in chemistry called crystallization temperature. Below this treshold, crystals begin to form. When u bring enough Energy to the System the Crystalls should melt.

I visited the biggest local beekeeper where i live in sweden, and he explained his process and some other things around it. He told me that all honey from sweden is crystallized ( maybe eu aswell). He told me if i found a product that is not, then something has been added to the honey to stop the process from happening. What he did was, as soon as he took the honey out of the cooled storage tank he had to stir the honey to make the crystallized particles a certain size to keep the honey smooth. He also added some alrdy crystallized honey with the right texture to the mix to help make the process faster.

I have heard honey in Europe is sold like that. What he is doing is what we in North America, is called whipped or creamed honey. I don't sell it that way but some other beekeepers do. The vast majority of honey sold in the US is not whipped. There is some comb honey sold, that which is sold with the wax still there. It's not extracted but sold as found in the hive. What we call crystallized honey is not the same as what he speaks of. Here it is a natural occurrence due to the make up of the honey. I should take some of my honey and whip it to see the result. Very interesting! I have a goal of one day producing my own honey. It is very interesting to see how it's done differently across the world, alot to learn. But am I correct in thinking that if you "whip" the ´honey that it will not crystalize later or atleast not with very big crystalls , as you have alrdy broken down the crystalls to keep the honey smoother once it does ? I also understood it as the process can happen sooner or later depending on the make up of the honey aswell. Another thing about Honey in the EU as I just read, to call it Honey here, nothing can be added or removed then you are not allowed to call it Honey anymore @@CleanSlateFarm

@@Daared81The honey bees will have an easier time making honey than you🤣. I don't make it, I just steal it from the bees. As far as the crystal size for creamed or whipped honey...that's a good question. I'll ask a local beekeeper near me as he makes whipped honey. If I find anything out I'll post it here. True! Hehe! It always seems to take away my sweet cravings with just a spoon-sensation. Yum! I just saw another video and it taught me to warm it up (not in a microwave) to get it back to it's liquid form. Yay!

Great info, saved me the time,, I was pretty sure, but I never had a late fall extraction turn so funky looking in the bottle so quick, like 3 weeks later, I plan on checking the bottles with the refactor meter later today. To the guy below, it's 18% and below, that's the point where yeast and bacteria can't grow. Grade A Honey.

No. Sugar is not added. Creamed honey is another thing. I've never done that

Why is it a problem? All honey look crystalized in Sweden, and I (until recently) often mistook normal honey with like maple syrup when seeing it on American tv-shows. I had no idea it was how raw honey looks - ours is waaay more yellow and I think they call the process creamed honey.

But the main point is that as long as the water percentage is kept below 17%, honey generally doesn't go bad right? So you can keep reheating it as many times as you would like without worrying about the honey going bad?

+Scrumgus Fleebus Thanks for writing. 17 or 18 percent is what the bees reduce the water content to. If it's any higher it runs the risk of fermenting, which needs sugar, yeast, and moisture to happen. Water percentage can be an issue if the beekeeper takes honey from frames with capped and uncapped honey. If the honey is uncapped the moisture content isn't reduced to +/-18%. The little critters know better than we do! If you heat raw honey beyond 115 degrees F it will destroy most if not all of the beneficial properties of raw honey. If honey is untampered n raw n unpasteurized or untreated ,should it be kinda thick but slightly runny in jar ?

Non Pasteurized, raw, untreated honey will be the same density as other honey. Thick, sticky, but not runny at normal temperature. We extract on warmer days as permitted to get as much honey from the comb as possible. Usually we do no not heat it after extraction. If we do it is only to about 100-105 F to help it flow. Any higher temp runs the risk of killing the beneficial bacteria and yeasts. Bacteria and yeast begin to di off at 120+F. As you may guess from the answer, warm honey is more runny than cold honey. Good question and I hope that helps.

if the honey came in a plastic jar, do you transfer it to a glass jar before letting it in warm (110 degrees) to de-crystallize it? I have heard it both ways - leave in original plastic jar or transfer to glass.

If it's in plastic and crystallized you would need to scrape it out, right? I would just warm it and pour it into a glass jar. I also find it takes a longer time to recrystallize after warming. Not sure of any health risks of warmed plastic though. Good luck

Lmao I tried to get a spoonful of honey today because my throat was hurting, n lo and behold, the entire thing had crystallized! But since nobody else in my house likes honey all that much, i just squeezed some into my mouth.

Ots possible. It's also possible that your keeping it in a temperature high enough not to form crystals.

I'm not sure about the crystalization. sugar is sucrose not glucose. there are several types of "sugars", glucose, fructose, sucrose, galactose, and on. To my knowledge, fake honey is made from corn syrup added to real honey that is highly filtered to remove pollen. From what I know this is how adulterated Chinese honey gets into the US and sold as real honey.Thnaks for watching

Hello,If honey is partly water, it should be possible to dehydrate it to form a honey solid. But honey is strangely difficult to dry. Do you know anything about that?

Luke, thanks for commenting. I have read that honey can be dehydrated but here is my take on that. Honey consists of sugars, (glucose and fructose mainly) and sugars are hygroscopic...they absorb water.The bees reduce the water amount in the honey to about 17 to 19 percent. So my guess, and I can find no conclusive or consistent data on this, once the moisture content is at a certain point it will take longer to get the moisture out and at a higher temperature. I've read 120F is the magic number but have never done this myself. Ambient humidity will come into play here as well and will determine how long you need to dehydrate. I would think that once dehydrated, keeping it that way would be a challenge. Maybe to help dehydrate and reduce the time needed you could put it in a pan on the stove at a slow simmer and boil some of the water out? That would kill the beneficial bacteria and yeast though. Maybe honey can be made into candy like maple syrup....hmmmmm. I may need to experiment now. The gears are turning! Thanks!

If you dehydrate it enough it turns to this strange jelly-like texture. It tastes the same. I had a jar in the oven for months (with the pilot light on) and lid off trying to dry it a bit...I accidentally got some water in it after cleaning the jar---oops. If honey had no impurities in it, it wouldn't crystallize. That's not to say these impurities are bad, they are things like pollen and even bee parts. When a molecule crystallizes, it looks for a foreign particle to bind with. After you have one crystal, other molecules readily form on the new crystal. If you super filtered the honey, this would either delay or prevent the honey from crystallizing.

I misunderstood your question...yes it is still okay. Just put the jar in water 1bout 110 degrees F and let it sit for awhile. Let me know how it works

@@CleanSlateFarm yes it seems ok now...but to check the purity i did this popular test of dropping honey in the water...although it did settle down but later when i tried to stir it got dissolved quite easily which pure honey i guess isnt supposed to....can u suggest something..i really want to see of its pure

Wrong. Honey is 20% or less water. If there was no water it would be be a solid. If it were higher water content it may ferment. Thanks for watching

I want to ask for your help on another matter. I wish there is a way to tell the real pure honey from the fake one, I checked many videos honey tests on RU-vid (like the heat test with lighting a match on the honey, the thumb test, the putting honey on a cup of water test and many other, but then I see many people debunk all these tests like this guy comment: ""Most of those are just tests for moisture content. Pure honey can be 18-22% moisture content, depending on environmental conditions when the honey was produced. My 21% honey that I pulled from my own hives would fail most of those tests... Videos like this result in me having to refund money to my customers that purchased perfectly natural raw, unfiltered wildflower honey, but saw a video on RU-vid that convinced them we sold them fake honey. Happens every year. Thank you so much."" So how can we tell a pure unfiltered honey from the fake ones. Do you know of any reliable test.

Thanks for watching and commenting. I am not aware of any easy way to tell if honey is real or not. People sell real honey at very low costs so that is not a predictor. Laboratory analysis would be the only way I have ever heard of. It looks at pollen content which can help track where it came from. Also if it contains corn syrup. Both of these are ways to check for fake honey from China marketed as real honey. If there is no pollen it probably was filtered out some way to hide the country of origin. As to corn syrup as an extender...a lab analysis would be able to tell that as well. Bottom line is we have never had anyone question our honey. If they do they are welcome to pass and go elsewhere. We are truthful with our honey and if someone questions us so be it. It's their problem not ours. We can sleep at night. As far as I know if the honey is 18.5% water it has the ability to ferment...or so I'm told. We never had that issue as we estimate how much water is in the extracted honey by how many cells were not capped. If a frame has more that 10% uncapped honey we leave it for the bees. Then figuring most of the frames are totally capped we have a very good idea of water content. Also someone tried telling me I should use a sugar % reader...I forget the name of them...but it checks the brix or sugar level. Since we've never had that issue and are careful I'm not about to buy one and add to my costs. All good question you asked. Thanks!!

Hi, Barry. A) It's not a honey farm...it's an apiary. B) Being naturally inquisitive I like to know why something is or how something happens. Therefore I investigate to find out the facts. Then I like to tell others so they may learn as well. C) Beekeeping is a constant learning process. Every time I go to the apiary I see something interesting that I like to read or watch more about. That's not just a bird that's a finch lol thank you so much for your information I was worried that my honey may be low quality but when you mentioned all of these good points it makes me feel much better I buy all my honey locally and I was worried that maybe they were having it with corn syrup and that was the reason why my honey was crystallizing but after doing what you had suggested my honey is wonderful again thank you

Wrong. You can warm up the honey to put the glucose back into solution - at least temporarily, until it re-crystallizes.

Fast crystallizing honey is some of the best honey I've ever had. Better than the honey that easily pours. Raw honey is such a magnificent substance! I love those bees!

My honey seems to hold up. Only 2 years in to keeping. But my sugar water seems to crystallize though. Have you guys been dipping too deep into the hive? : )

Thank you for that fast answer! I have good honey then, local. Great for allergies. Not so great for my Keto diet, BUT, when I need a late-night sweet treat, I go for my Organic Peanut butter and Local Honey! You can't go wrong with that combo...

i have watched several of these de-crystallize videos....and not even one tells you HOW LONG THE rejuvenated honey REMAINS LIQUID after our little melt-down????

maybe it tastes a bit different due to lack of moisture in it's crystalline state...but i will eat every drop till it's gone....then buy more......(⊙ヮ⊙)
