Curcumin is a fascinating compound, I work with it for almost 6 years :D Actually you can also test changing pH of a solution with turmeric, once its goes from fluorescent yellow in acid solution to orange for neutral or basic (pH 8) solutions. If you try to put turmeric in warm or hot oil, the fluorescence will be higher because the curcumin will dissolve better and faster :D
