Teflon was in the spacesuits the Apollo crew wore for the moon landing, in pipes and valves used in the Manhattan project, and it may be in your kitchen, as the nonstick coating on frying pans and cookie sheets. So what is this slippery solid - and why doesn’t anything stick to it? Ashwini Bharathula describes the science behind Teflon.

Tyler McDaniel imagine watching a ted talk and thinking you’re an expert. Teflon has no adverse long term affects and this video was very misleading with how hot you need to get the Teflon pan before it begins breaking down. A few people have managed to heat their pans hot enough that the Teflon pans release fumes, this condition is called polymer fume fever and there’s been maybe 3 cases in recorded history of people getting it from Teflon pans and even then it has identical symptoms to a common cold. Teflon can only cause adverse reactions when inhaled so even if you get some on your food it is completely non toxic. I am a chemical engineer who has done countless hours of research on Teflon and if you think Teflon is bad I hope you don’t eat anything wrapped in plastic because that is way worse for you

To be accurate, it only provide one evidence in favor of your theory. To truly get a generalized result. you have to sample fairly from all the "great things" (sliced bread, teflon, velcro, ...); then classify them into 2 classes of whether they were born by accident; then see the proportion of the classes.

*The issue is that Teflon might start emitting poisons much earlier than you think,* especially due to local overheating like in case of frying eggs you see in the video. The eggs are not really going around the pan all the time, they occupy certain area. Thus other areas of the pan get overheated.

A video is needed on the safety of food cooked on teflon coated objects. Although she mentioned that it's harmless but it's no secret now that over time, teflon enters our body with food and is a carcinogen. It was also mentioned in an article that 3M knew since 1980's that Teflon is a carcinogen but they sold the utensils anyway. As for me, I have stopped using teflon coated utensils.

The "proprietary" primer layer is just unsaturated hydrocarbons which they get by stripping Teflon using ions under high vacuum or a reducing agent. They will also bake it at high temperatures, to give an extra mechanical bind. There are two coats of this and some DuPont marketers will refer to it as the mid-coat but it's just another spray of the same stuff. The top layer is Teflon stripped in a more controlled manner on one side so that they stick to the primer.

you missed out the most interesting property about Teflon: that its 3-dimensional structure can not be explained by normal Physics/Chemistry, it resembles the projection of a 6-dimensional crystalline structure. and it is not the chemical non-interaction that nothing sticks to it in your pan. it is the surface structure of micro bumps and valleys.

I'm sure they're quite safe when the pan is brand new. My big worry is the millions of super old pans that people don't bother to replace when they wear out. You get huge flakes of chemical-infused heat-resistant plastic flaking into tiny bits and ending up in your food... I don't know for a fact it's dangerous, but man does it ever freak me out when I see someone cooking in one of those.

Wonderful technology! Maybe someday we may even discover a method how to get rid of it. It stays in the envirnoment virtually forever, if no bacteria or naturally occuring chemicals are able to decompose it...

Interesting that they don't talk about birds. Remember how we used to carry canaries in the coal mine? That is because birds rapid metabolism and small size make them especially sensitive to environment. Most bird owners are well aware of the dangers of using teflon coated cook ware in their house. Even if the pan isn't left on a burner and reaches 500 degrees, a chemical soot is still released and it can make birds very ill. It's bad enough that people who take bird care seriously do not use teflon in their homes.

do sudden temperature shocks degrade the pan too? My last non-stick pan ruined, and i wonder if it's because i used to put the hot pan in the sink and turn on the cold water over it
