One big reason I love them is how quick it is to add them last minute. When my food is almost finished, if I see it's missing a little contrast or is too salty, I'll just dump some peas in there, and they don't even need to cook, they just defrost with the remaining heat. It literally can be a last second decision, no prep or extra time needed.

I *have* to have frozen peas to add to my homemade stovetop mac and cheese. Peas are also great in pasta with chopped ham, bacon or (best) prosciutto, butter and plenty of cracked pepper. Roasted red peppers are a nice extra. I learned that one from Marcella Hazan in my earliest days of learning to cook. It would have been the late 80s very early 90’s because they cookbook I had was a mass market with the cover ripped off. I used to get those for free in my bookstore days. I mean anyone willing to go thru our dumpster could have gotten them for free but it was easy for me.

Peas are one of those vegetables that I just sort of lost track of once I moved out on my own. They didn't feel as impactful as corn or broccoli or the mixed bags of vegetables you can buy. It wasn't until I bought them on a whim one day that I realized when thinking about what veggies can I add to a dish, peas just always seemed to work. Since then they've become a staple for me, so I'm glad to see them get some well deserved attention.

I've taken to petit pois for a snack. The steps go as follows. 1: Boil the kettle and pour freshly boiled water over petit pois in a bowl. 2: After 60 seconds, drain water. That's it. That's all it takes. It's faster than the recommended brew time for tea. It's sweet, high in protein, healthy, has less prep time than a sandwich and is cheaper. Add butter or salt or msg or dill or whatever you want. But fundamentally pre-packaged snacks are the only thing that's faster.

Also good for an ankle sprain to reduce swelling. If the peas are frozen together in the bag just whack it on the counter to separate them and the bag will conform to your ankle. If it feels too cold, place some cloth between the bag and your skin. Wrap a towel around everything to hold it in place. Then you can heat the thawed peas and eat them with butter, salt and pepper.
