Why I Love My Vacuum Sealer (FoodSaver FM2100) and How I Use It

In this video, I'll share how I use my vacuum sealer to organize frozen goods, thaw things quickly, and make food last longer. I'll also show you how you can seal food in generic ziplock bags so you don't have to break the bank.

Hi, everyone. This is Lara Hammock from the Marble Jar Channel and in today's video, I'll share how I use my vacuum sealer (www.amazon.com/FoodSaver-FM21...) to organize frozen goods, thaw things quickly, and make food last longer. I'll also show you how you can seal food in generic ziplock bags so you don't have to break the bank.
I'm completely in love with my vacuum sealer. I put off getting one for a long time, mostly because I'm cheap and didn't want to spend money on the expensive custom bags that you are supposed to use with the sealer. But eventually, the reasons for getting one got more compelling AND I figured out how to vacuum seal somewhat successfully with cheaper Ziplock bags, so now I'm a total convert. Real quickly, here were my reasons:
* Quick thaw - I'd like to tell you that I'm the kind of person who always takes meat out of the freezer several days in advance so that it is all ready to go on the night of the meal. But I would be lying. Sometimes I plan ahead well, but sometimes I don't. And on those days, I want a solution that doesn't involve microwave thawing, which almost always results in a portion of the meat being cooked in the process. If you freeze meat in the original packaging or in a huge lump, there really isn't any other option other than letting it thaw naturally or microwaving it forever. HOWEVER, if the meat is vacuum packed as flat as possible, it only takes about 20 minutes per inch of thickness to thaw in running water. This is a definite plus for our hectic lifestyle. I also got myself a large collapsible bowl for quick thawing that fits most of my meat and stores easily under my sink.
* Compact Storage - In addition to wanting to be able to thaw things quickly, vacuum sealing portions as flat as possible has also made it easier to fit more things into my freezer. I like to store thing standing up whenever possible, particularly for my bottom freezer which is just like a big drawer. Piling things on top of each other is a good way to lose track of what is in there. Plus, freezing things in uniform portions helps store more meat in a small place. And finally,
* Long Lasting - Vacuum sealing wards against freezer burn. Meat and other foods stay good longer when they are vacuum packed with all of the air removed. In addition, I now vacuum seal small cooked portions of meat, leftover veggies, and other random sundries that might go bad in the refrigerator, but that I can thaw and use right away from the freezer.
I don't really have a strong feeling about which Vacuum Sealer you choose. There are a bunch on the market. I picked the FoodSaver FM2100. It had all of the features I needed, plus it was small, so it stores perfectly in an easy to access drawer in my kitchen. I know myself -- if it takes too much hassle to get to something, I'll never use it. Okay -- I'm just going to quickly go over the functions here. The locking mechanism on the side has 3 modes: Open which allows you to freely open the top, Store which I don't use, and Operate, which you use when you are sealing and I also use for storage. The storage mode is supposed to lock down the top, but when I choose that mode it kept flying open and catching my fingers, so I just use Operate mode for storage as well to make sure the top stays closed. Since I have yet to use the accessory port, this machine has really just 2 functions: sealing alone and vacuum and sealing. Sealing alone is this red button. It is just going to make a nice seal on whatever plastic you clamp inside the machine. I'll show you how it works:So, you can see that there was no vacuum sound, it just used heat to create this seal. There are two reasons to do this: one is so you can create a bag. FoodSaver has two different options for bags. You can buy them pre-made, meaning you just have to put the food in and seal the top, OR you can buy a roll which you put into the machine, you cut the plastic to the right length using this cutter here, and then you seal the bottom using the Sealing Only function to create a bag to put food in. . . .

3 years ago, but still helpful to me. I loved your tips, as I have always hesitated to buy food sealer. NOW, the benefits are more apparent and can get sealer cheap. Thank you for helping me understand I can reseal chip bags and zip lock baggies! I use TONS of Zip lock baggies and tired of the ice crystals, without a sealer! Your partner is a fortunate person, to have you!

Awesome video...I’m about to order my foodsaver now!! The Covid-19 brought me here as I’ve been trying to save money on wasting food. I went to purchase a nice amount of food and realized that I needed to clean out my deep freezer. I felt bad about the amount of things I had to throw out because they were freezer burnt. The no name brand 4mm bags and rolls on Amazon are great. Cheaper and just as good as Foodsaver brand.

got one of these for christmas, thank you for the tips and hints. Wondering if using that basic generic cream colored masking tape on the outside of the top and bottom wouldnt also give the machine enough texture to seal. The stuff everyone used to use to keep paint lines clean that feels rough, like a slightly bumpy paper. Might have to give it a try after I get through the bags.Love the chip idea, never even occurred to me to use it without the vacuum function.

Thanks for sharing, I just got my 2100 today, and have run out of things to vacuum seal. I love this thing. One thing I did notice in your video and wanted to share with you, by storing it in the “operate” mode, your gaskets are staying smashed and may cause them to wear out faster, you may have to give the machine 20 minutes or so for the gaskets to puff up, or not, I’m not really sure, my friend told me about that, so I wanted let you know in case you start having trouble later on. When using the roll, only roll out enough to seal while still attached to roll, then bring it out to selectable length, load food then seal again…..much faster

Nice video. I remember seeing a Food Saver infomercial in the 1990s, thinking it was a lot of hype. For some reason, I was still intrigued and bought one anyway. Fantastic purchase that really lived up to all of the claims. I do product reviews for a major company (part-time retirement gig) and have been able to test a number of different vacuum sealers. They are generally more similar than different (I wonder if most are made in the same factory). They do vary based on levels. There are consumer-grade ones, ones more suited to heavier use (for instance, for hunters who have to vacuum seal an entire processed deer), and pro models for continuous use. The higher-grade sealers are more likely to have replaceable parts, which increase their longevity. They will also have higher quality pumps, can run longer without overheating, and may be made of better quality materials (more metal). They will also likely draw a slightly higher vacuum and may have a thicker (or double) seal. These later factors are important if you plan to store your food for a very long time (several years). For most, an inexpensive vacuum sealer gives all of the capability needed. Our house's most important functions are dry, moist, and bag seal. We don't use the accessory port much, but others do, so buyers should buy a machine with this option. I'm a lazy guy, so I almost always use premade bags. I only make a bag when I need a very odd size. Generic bags are cheap and seem almost as good as branded ones. If you watch for sales, they can be around the same price as Ziploc bags. In all the years I have been using them, I have only had a bag fail twice- from the same box of generic bags purchased on closeout from a local hardware store. I'm guessing there was a problem with that batch, but the other 48 bags in the box were fine. My original 1990s Food Saver still works. I took it apart, and it has much more robust components (including the vacuum pump) than modern units. The different lines of current Food Savers are mechanically very similar. They are separated by "features" such as automatic bag feeds. These extras add to the complexity of the machines. Although my old Food Saver still works, it is more manual, so I don't use it. I bought a Cabella unit used on eBay (works great) and a chamber vacuum sealer. Both have their pros and cons. The Cabella unit (traditional channel type) is fast and easy to use. Bags are sealed externally, so you can use pretty large bags. The chamber vacuum sealer draws a stronger vacuum, can handle wet foods better, and the bags are about half the price of regular embossed bags. However, the bag size is limited to the size of the chamber. Chamber sealers are also much more expensive to buy. I'm a vacuum sealing nut, but most folks would do fine with a basic channel-type sealer. I like to buy bulk meat and repackage it into meal-size portions. I vacuum-pack cut vegetables, like half avocados. They will be useable for days if stored in the fridge. I also vacuum-sealed stock items like coffee or bags of cornmeal, which can go rancid easily. During the 30 years, I have had vacuum sealer, I have had lazy times where I forget about using it and throw stuff in the freezer, only to find that once again, I ruined an expensive chunk of meat due to freezer burn. As you have said, having the vacuum sealer readily available is imperative to maximize the benefits of having one. Pro-tip, never lock your sealer when storing it, you will crush the gasket, and it won't seal. The one advantage of buying a brand-name unit is that you can get replacement parts (like the gasket) if you mess yours up. However, gaskets seem to last long with care, especially for typical home use. Thanks again for your video.

Question so when using the vac/sal button, if you hit the seal button, the machine stops the vac process and starts to seal? I am attempting to try this using a roll of bread. Initial test was too much air was vacuumed out and the roll was squished and did not recover it shape on reopening the bag.

Actually tested and it did work. The first test i over squished the rolls of bread and they stayed squished after opening naturally. Key is to extract just enough of air to slightly compress. My bread stayed fresh for multiple days and i left enough extra plastic to be able to reseal it over multiple days.

I received my vacuum sealer two days ago. I had not used the machine because I want to buy more bags but I check on line and tried company get right size of bags. Does it matter what type of bags to buy

Yes! I’ve been set right by the good folks on this platform. I no longer store in operate mode, so now I have a giant rubber band around it to keep it from popping open.

You really shouldn’t store the FoodSaver in operate mode. It squishes the seals tighter than Store mode and it could cause the unit to malfunction/lose sealing. Otherwise I like your presentation.

Ordered one off Amazon. Did not fit my FM2100 33H. No response from Foodsaver, Amazon sent me to Foodsaver. Dead end. Anyone else same experience? Sad. I bought the Foodsaver specially so I could vac seal jars.

What did you order off Amazon? Bags? You talk about vacuum sealing jars. Did you order the jar sealers off Amazon? If you didn’t order from FoodSaver website, they are probably counterfeit items made overseas somewhere. Lots of vacuum canning videos talk about this problem with both jar sealers and bags that the channels run horizontally instead of vertically. I have the jar sealers in both wide mouth and regular mouth that I bought from Cabella’s and they have worked on several types of actual FoodSaver systems over the last thirty years.

@@lindaburnette2200 I bought an FM2100 33H I ordered the sealer kit off amazon FoodSaver FCARWJAH-000 Kit Wide-Mouth Jar Sealer with Regular Sealer and Accessory Hose, Simple... the sealer does not match the foodsaver... any help would be awesome no one can seem to match me to the right sealer to the right device....
