■ Materials
(A) Milk … 250g
(A) Vanilla beans … 2
(For vanilla bean paste, about 2 tablespoons)

(B) Beet sugar … 75g
(B) Weak flour ... 63g
Whole egg … 1 piece
Egg yolk ... 1 piece
Rum … 2-3 tablespoons
white chocolate
Nuts and dried fruits (toppings)
■ How to make
[ Day 1 ]
①Cut the (A) vanilla bean pods in half, remove the seeds, and place the vanilla beans in a small saucepan. Heat while stirring to avoid forming a film.
②Put salted butter in the pan with the fire turned off in ① and melt it with preheat.
Cool to about 60 degrees while adding vanilla scent.
③Put (B) soft flour and beet sugar in a bowl and mix with a whipper.
It tends to form lumps, so mix it with the beet sugar.
④ While straining ② into the bowl of ③, add about half the amount and mix a little with a whipper.
Once mixed, add the remaining ② and mix.
⑤ Put the egg yolk and whole egg in the bowl from ④ and mix.
Add rum to it and mix.
⑥ Filter ⑤ with a strainer.
⑦ Wrap ⑥ and let it rest in the refrigerator for 12-24 hours.
★Tips
・The reason for resting the dough is to let it rest and settle the gluten.
This will prevent the dough from popping out of the mold while baking.
[Day2]
⑧The next day, take it out of the refrigerator and bring it to room temperature.
★Tips
・Gently mix the powder that has accumulated at the bottom and filter again to make it smoother.
・You can quickly bring it to room temperature by boiling it in hot water.
⑨ Pour the dough evenly into a mold coated with softened butter, and bake it in the oven heated to 230 degrees for 20 minutes.
At this time, the bulging dough will protrude from the cup (if you let it rest well, it will not pop out easily), but it will shrink as it cools.
⑩Set the oven to 190 degrees, switch to the lower tier and bake for another 40 minutes.
*The degree of baking differs depending on the oven, so adjust the temperature until the outside is browned at 190 degrees. (The fabric will shrink while adjusting.)
⑪When the outside is baked, cool it in the refrigerator for about 10 to 15 minutes.
*It is OK if the dough does not stick to the inside when you insert a bamboo skewer into it.
⑫While the canelé is cooling, add an amount that will be about 1/3 of the canelé
Melt the white chocolate in a water bath.
⑬Take out the chilled canelé from the refrigerator, turn it upside down and put white chocolate on the surface.
Before the chocolate hardens, top with nuts and dried fruits.
⑭ Chill in the refrigerator for about an hour and you're done!
Note: In a home oven, the bottom tends to burn, so if it burns, cut it with a knife and eat it.
