In any town and city big or small in Thailand, you will always find a local eatery whose name all the town people know by heart. This type of eatery is often in a small shop house located in a busy area of town. Once you’re inside, you’ll smell all the different kinds of curry dishes-there are often at least five or six-that you could choose from to put on top of your rice. All the curry (and other wet food) are put on display so you can see and point when making your selection. This type of eatery is called Raan Khao Kaeng (ร้านข้าวแกง), and green curry is such a staple in all the Raan Khao Kaeng in Thailand! And I believe this is where you will find the best green curry. Green curry with fish balls has always been my favorite! And I like my green curry with white rice and fried omelette as well!

Yes… I’ve never even heard of it!💙 And I’m a pretty avid home chef, and have diverse palate / decent multiethnic food knowledge / multiethnic family @ home, etc. BUT I really came here to say: omg.. isn’t it SO on-brand for those of us here in the USA (since we’re so adept @ food waste, broadly-speaking) that we would chop away & discard the highly edible & useful root of the plant, w/o a second thought! Such that folks like myself are unaware that another edible portion of the planet even exists? lol & it’s actually a household staple in other cultures!☺️ (..tbh it’s such a shame tho..🤦🏻‍♀️)

@@k_m_SFbay To be fair, it is a very niche ingrediant outside of South east Asia. So don't feel bad. It's actually kind of funny. Here in Japan, they 'kindly' chop it off before putting it on shelf!

@@henrytentacle lol yes 😅 same as they do here.. ie. = ppl unaware of its potential usefulness., right…so I wonder how one here would go about finding it? I suppose I can just grow my own, however it might be difficult in an apartment w/o a ton of direct sunlight.. but perhaps UV/hydroponic.. 🪴💡🤷🏻‍♀️

Thai restaurants in Hong Kong almost always have roti as a side option, especially for curry, but somehow online I never see this, and I wondered whether this was just a Hong Kong thing or it actually exists in Thailand

I used to serve roti with my curry at my restaurants in NYC. You can find roti and curry in Thailand too.

I use chili leaves or some spinach mixed with water to make the curry looks a little more green

Nice exposition on green curry. I'm gonna share this as a postscript to Adam Gottschalk/OTR's episode a few days ago about the origins and real Thai experience of "Stoplight Curries", meaning the red, yellow and green curries. As for the brands of curries available here in the US, I'll be looking forward to Pailin's taste test tonight or tomorrow, but I think I know which brands will come out best; one of them is much more like what old school homemade pastes would be like in Thailand, and it imparts far more flavor and authenticity to any dish, particularly if, like me, you don't have the space for a mortar and pestle to grind your own.

My absolute favorite green curry is, funny enough, vegetarian one, loaded with mushrooms and firm tofu.

In bahrain,we used also the celantro roots..sooooo amazing smeels of my dish❤❤❤...im laughing of that chocolate tofu😀

In Australia the big supermarkets cut off the roots but luckily we have many green grocers (vegetable markets ) that leave the roots on. Thanks for the tip on leaving the roots in the ground - I can grow it in my garden. Great podcast.

In Russia they always cell cilantro with roots attached, even in the supermarkets.

I haven't frequently cooked my own, fresh curry (of any color) from scratch. The reason is, I seem really good at making my curry curdle. Any tips on what I'm doing wrong?

I am so sorry you don't have a good experience but trust me, practice makes perfect! Did you put lime or acid in your curry? Because that is the only ingredient I can think of that will make a curry curdle. Please keep me posted.
