It's called a knot because you could section off a long piece of rope with measured knots and dip it into the water attached to piece of wood called a common log (it's kind of round like a bathtub stopper). The rope would then play out over a measure of time (first with hour glasses and then actual time pieces). Then you counted the knots between the common log and the ship and that gave you yours speed upon calculation because speed is distance equals rate over time.
incidentally also why the piece of equipment that a ship uses to messure speed is still called the "log". This is also where we get the term "logbook" from.

I've heard the sailors would let out a plank attached to a rope with knots tied every few meters, thus every knot that passed through their hand in a certain time frame would equal one knot

Being at that time, people were more loyal to those who ruled them than any sense of national pride. As the concept of National Pride is more of a modern invention (19th century is "modern"). So you could be born in England, but live in France, and could go over to Prussia for work and claim to be French. Even though you are really English.

Columbus had nothing to do with figuring out the earth was a sphere. In fact he thought it was more pear shaped and a lot smaller (hence why he thought he could get to Asia). We had known the Earth was round since the ancient Greeks and probably before.

Because we said so. That's the way the units are defined. The land mile as in 5280 feet (whose full name is statute mile) already had a legal definition before the concept of a nautical mile was coined. Since an arcminute is roughly 1 mile, they coined the nautical mile so it would be exactly 1 arcminute based on the equatorial circumference of Earth. This was coined as a unit of convenience for sailing (and aviation in modern times), so it would be easy to relate distance to angular measures of location (longitude and latitude).
Because this is not how they did it. They just dragged a knotted rope behind the ship for a certain period of time and counted the amount of knots that went over board in that time.

I'm currently in a class all about cartography, Erasthones is actually credited with parallels and meridians. Hipparcus isn't generally credited with any significant cartographic discoveries. A coordinate like system is found on other ancient maps however, such as ptolemys world map. Really interesting history in coordinate systems Also a knot is actually more literally a "knot" like on a rope. They would throw the rope out of the back of the ship and measure how many knots on the rope fell out in an amount of time to determine speed. I am also not sure that time had been commonly used to measure distance in parallels in the ancient world but I cannot speak confidently on that aside from saying that method wasn't really worked out reliably until the 18th and 19th century AD
I remember reading Joshua Slocum's book about his solo circumnavigation, and his method of figuring out where he was was to just take a direction, keep track of how long he's been going in thay direction, and estimate his position from there.
Knots was simply a rudimentary way of measuring speed, they would run the knotted rope out hourly and time it to establish yards per hour, end of the shift the navigator would add up their speed tests and make an educated guess at how far they had traveled on their chosen heading
The "knot" is part of a device of measurement called a common log. It does measure this distance referred to, but the "why we call it a knot" is using this tool.
