Yep.... I have this problem too... I don't order steak anymore as every, single, time, i am disapointed... Having a salamander grill at home is a blessing, and a curse... I don't understand its low temp cooking, ultra high heat gives the best sear with absolutely no grey ring at all.

@@mikaellavoie6811that’s really funny to me because I no longer go out to restaurants anymore because I can make a way better steak at home for less. There is only 2 restaurants that I’ll go back to because they haven’t disappointed me once but unfortunately many have. A lot of the time my steaks won’t even come out at the right temp or the crust is tragic and almost always there is no seasoning.

​@y_conflict2930 Same here. Only two places I've been that had better steaks than I can make at home and they were $100+ dollar steaks, but worth it. Most places I go literally can't cook a medium rare steak if asked, I have to ask for rare to get it otherwise it's medium. Little to no seasonings, bad sear. It's like what are yall doing lol. But honestly I just reverse sear at home with an instant read thermometer and get a perfect wall to wall medium rare everytime.

Not skirt steak, that was Top Blade or sometimes called flat iron, comes from the chuck/shoulder. Second most tender cut off the hoof next to tenderloin with more flavor.

No over-salting, but lots of home cooks under-season. I cooked in restaurants for 20 years and I actually season less at home than in restaurants, but yes, you are aiming for it to be *just right*... And use all the butter in the house.

I know right? Most people rate skirt steak poorly because it is leaner and tougher than other cuts. Still, like the guy said, his skirt steak had a lot of marbling, which probably explains why it cost him 17$. So expensive for skirt steak!

In restaurant terms that's really just a "bit". Like... Some scrambled egg recipes are 50% butter. (Not to that degree, but if you look up eg. Gordon Ramsey's recipe, it says 2 to 1 ratio of eggs to butter too.)

Costco beef is fucking amazing. You won’t find better quality for the price unless you ranch your own cattle lol. Also, life hack. Sometimes Prime cuts accidentally get packaged and labeled as choice. Look in the choice bins for cuts with extra marbling. It happens more than you would think. And one last bit of advice: Buy whole cuts and butcher them yourself to save a lot of money for minimal work. You can use trimmings to make your own ground beef, and save the fat so you can render it down and cook your steaks in pure beef fat!! And no surprise either that potatoes and vegetables taste incredible when also cooked in Beef Fat 👌🏼🥩🔥

After cooking steaks professionally for years, heres what matters: - High-quality fresh meat - Steak are better sliced from a whole cut - A cast-iron pan or chargrill on high heat - High quality flake salt - Resting for enough time Butter basting is just a luxury. Some places I've worked do it, but be prepared to pay for it.

If you understood how chemistry a cooking cross over you would immediately understand. Rest times, low temp cooking, Meat quality all of that makes a major difference- think about it in related to chocolate it's like 90% technique. If you fail to properly temper good chocolate -it also won't be as great as when you purchase it that way. I hope this helps :)

You don't care at all about the center, the non-searing cooking will get to that but cooking on an uncovered pan or grill won't touch it. What you care about is how thick the ring of "overdone but not seared" bit is between the crispy parts and the raw parts.

I have never worked in a resteraunt that does two separate 10 minute rest times and then finishes it off at around the 30 minute mark from start to finish. They couldn’t push enough steaks fast enough. What they actually do is let them age several days in the cooler then put them on the line for the day and just straight grill them. Baste with a seasoned butter straight on the grill, then plate it. Should be out in no less then 15 minutes.

Some friends of mine got a 30-40$ different high quality steaks, they grilled it for a bit and then put it in tinfoil while it was still piping hot with butter on top and below and let it inside there for a while. After it came out it was sprinkled with some big high quality smoked salt. It was absolutely divine and that was the steak alone without herbs or anything else.

Cooked in a high end steak house before... We did a similar method. Sear on grill, rest, then finish in broiler at the end and top with compound butter in the pass.

Nothing Special. Just an Induction stove top. That little disk he puts down is a Induction Converter disk that allows him to use regular cookware with his stove top. But you can buy specific pots and pans designed for an Induction stovetop. If you haven't seen one in action or know the pros and cons. For sure check them out.

Gorcery stores sell green meat (not long from the kill floor). Looks better in the display case because it's "fresher". But there is a sweet spot, and it ain't there yet. Restaurants buy foodservice boxed beef, which has been wet aged (in the cryovac) for a few weeks at very low (but not quite freezing) refrigeration temp. This allows for the protein to break down, thus becoming more tender than the green meat you buy in grocery stores.

The Garlic and herbs plus the butter really adds that extra flavor! Skirt steak is highly underrated. You can also cook it over wood chip coals and then after brush off the ash from the wood, place in a foil pocket to rest and you have a open grilled steak🤌🏻🤌🏻seasoned of course😂. It was an Alton Brown method. Definitely worth checking out. I may have missed a step there in all that but it seemed legit. That skirt steak you have there looks very delicious sir!🤟🏻🤌🏻

I bought a 16$ pound of skirt steak and I only seasoned it with salt and pepper. I cooked it for 10 minutes on each side and man it was super juicy and it tasted amazing. I warmed up 2 corn tortillas, heated up some whole beans, and got some of my grandma's homemade red salsa. Those tacos were fire. I never eat out. The food from restaurants does not compare to what I've been eating at home for the last 6 years. Sometimes I find a needle in the haystack and I find a nice little restaurant that has amazing food.

That is typically what it comes down to. A lot of people just don't want to spend the money on a high quality cut of steak at a butcher and would rather spend a couple more bucks at a steakhouse to know they are going to get a steak cooked to their liking.

And they use a ton of butter as they can actually reuse it on the next steak. The same with frying in oil or fats, they can do it because they can just use it for the next steak. It's economies of scale which means they can afford techniques that would be waste for you to do. You have to expect to waste a lot of you want to cook like the restaurants do.

A few bucks on butter is worth making an awesome steak at the house. Unrelated but funny story I live on the 41st floor and I have a balcony. I was grilling steaks and left it open when I ran into my condo for something when I came back out to the balcony I found that a strong gust of wind stole my steaks!

It is true that most restaurants cook steaks and and meats and veggies in butter. It gives the food a richer taste. I've been taught to let your steak come close to room temp before cooking so that part is a bit odd to me, not saying it's wrong necessarily but the meat tends to loosen up a bit as it gets near room temp.

They also serve it in a plate that's warmed up. A cold plate makes your meat cold very fast, a warm plate keeps it warm for... a long time. probably like an hour. idk lol.

Skirt is too thin to reverse sear. 3 to minutes to a side and its done. If you cook until internal temp reaches 1XX degrees, searing will overcook it.

Or just get crappy ingredients I swear it's hard to find good spices some days. I found some good spices but most were meh. At restaurants the spices never suck even their black pepper is better than the store bought stuff. I think the best we can do is get whole peppercorns and put them on a coffee grinder or just keep your own spice garden because most cooking you have meh spices unless you go super expensive or steal them from a restaurant.

I know that some less steak oriented Restaurants in the UK are have brought Sous-Vide into the steak making for reducing time on the skillet and more accurate finishes. But all the good steakhouses are taking cuts from Raw to preferred finish every cover.

Costco has quality beef, but unfortunately, they mechanically tenderize (jaccard) *all* their steaks. I worry about pathogens because of that, and don't buy their steaks. If it was me doing the jaccard, I wouldn't worry because the steaks wouldn't be sitting around for days, but Costco steaks do. Their whole roasts cut into steaks are the way to go - better price, too.

@ericfranke1637 With steak, yeah, unless you like it above 145F, when bacteria start to die. Bacterial death is a function of temp and time. But anything below 145F won't kill bacteria. You'd have to hold a jaccarded steak at 145F for about 10 minutes to ensure bacterial death. 165F is instant death to bacteria.

@ericfranke1637 Not for a jaccarded steak - you can basically look at one of those at Costco as a ground beef patty. They tenderized it, and now that it's been exposed to bacteria internally, the clock starts ticking as the bacteria multiplies. I'm pretty sure that's why you don't see discounted/clearance, older steaks at Costco. It's obviously easier to hold temp with sous vide, but if that temp is 132F, bacteria will keep reproducing. All this being said... Costco obviously has *very* good food sanitation policies; otherwise, we'd be hearing in the news of people getting sick from their steaks constantly. I still take a pass on them.

Worked in several michelin kitchens and Ive never seen any chef remove steak after two minutes to wait 10 minutes and continue cooking, you can still develop a good sear by just cooking it all the way the first time, the amount of butter was accurate though you need A LOT

Thats not nearby the best meat xD B means it has a worse meat/bone ratio then the A already. Lot of people missunderstand a lot wrong their. Wagyu just means "beef" in Japan. Its just the name of their cattle breed, nothing more, completly normal beef. The A5 mean its the best their but still just normal beef. Kobe for exemple are better. They have many different prafectors (47 to be exactly). Severall of them offer special treated meat like Kobe which just can call itself Kobe if its raised in this prefector and reach higher standarts in meat quality then normal wagyu. Its the same like "Champagne" which just can call itself so if its from the region "Champagne" in France and has a higher standart then normal sprakling wine, even if they get used similar in the US.

Here in Puerto Rico, skirt steak is one of the premium meats. It's kind of crazy because when I go to the U.S. there's never skirt steak, and someone there told me that's a poor people meat. Honestly if that's poor meat then poor people eat great. Super underrated meat

What can't be denied is that skirt steak is tougher than other cuts like ribeye. Compare a ribeye and a skirt steak, from the same individual animal and cooked the same way, and the ribeye will be more tender than the skirt steak.

I've never been to a restaurant that prepares steak like this lol. A normal texmex restaurant like Longhorns, outback, or Applebee's only pan sears with your choice of what temp you want it cooked. Very rarely do you find one who based with aromatics.

You guys should know that Costco needle tenderizes their beef, meaning the meat is pierced all over with blades to tenderize it. This can drive surface bacteria deeper into the meat, meaning that cooking steak correctly (medium rare) isn't always safe as it is with regular beef.

That’s an absolute lie and someone is flirting with getting sued by Costco. Pierced meat flattens out as it is cooked and loses its juices, which I often see with meats on sale from major grocery stores. Never Costco. Once in awhile I get a steak that is not as tender as it’s grade would indicate from them, but never anything that ever looks tenderized.

I live in the Adirondacks, a place that’ll reach totality. We’re going to have thousands and thousands of tourists coming here. Yeah I agree. The problem with cooking skirt steaks is that it really forces tourists into low density areas with infrastructure that is unable to handle increased pressure. I would recommend only cooking ribeye or rump.

the best in commercial stores is USDA prime. my dad used to work for Emril Lagasse in Las Vegas in the 90’s-2,000’s and he’s taught me all i know about cooking. another way to get amazing steaks is a marinade with areomatic herbs, such as thyme and rosemary. we always do ours in a cheap red wine because it honestly does not matter the quality, just flavor.

edit: butter baste the steak in herbs as well, for added flavor. it also pains me to see him not use garlic powder when seasoning, and i didn’t see too much pepper. if you look in the right places a ribeye or a NY strip have more marbling, but what matters most to me is the texture. for the best steak that’ll feed a family of 4-5, try a tri-tip. it has okay marbling but it’s tender and has good flavor.

Good meat, good technique, high heat, lotta salt and butter. I love steak tho because you can do it so many ways. Aside from the method here, I like sous vide a lot too for specifically filet. Ribeye i prefer the butter basting, reverse sear or hell even a grill. Also this sounds crazy but mayo can get you a fantastic crust.

The game-changer for me was REST TIMES..... Heat two plates hot - but hot enough to touch not hot enough to cook the meat. When you're done cooking the steak to rare, pop them in between the two plates - top one inverted - and rest while you make your sauce/reduction etc. or get other stuff ready A 10-minute rest time does WONDERS

Stake seasoning from a big box grocery store helps. Also a pinch of beef stock for seasoning also helps. To much of either can make it too salty you want a bit more than a dusting maybe x2 of a dusting. I prefer garlic powder if you decide to add it as it will cook the same time as your stake, unlike a clove that needs extra time. All ways add butter to the olive oil when cooking.
