It's not hard if you know how to but for beginners it is hard. My grand grandfather was one of the best bakers in my country and he had a diary full with all the ways to create hard things and also easier ones
More like all of the easiest pastries I even watched the baked Alaskan and it looked pretty easy to me. Why do people actually complain about these desserts being so hard to make?
I mean, eclairs are actually pretty piss easy to make, it's just the custard part most people fuck up still including myself sometimes 😂 Same with Creme Brûlée
If you actually ask any real pastry chef out there, they will tell you it's not even close to being hard. If you have a proper recipe, even a mediocre pastry chef can do it. That applies for the vast majority of dishes. People on RU-vid would do and say anything to get views.
The reason that baking is super difficult is because in order to make something properly it must be perfect, which is much harder than the process would imply
Probably just means very time consuming as the steps don't look too difficult just time consuming and a baker with some experience might be able to make em, unless he just over simplified the steps for these vids which could be the case
In France, 95% of the time Eclairs au chocolat are filled with a chocolat custard (Crème pâtissière au chocolat). We also have Eclair au café (coffee), Eclair au caramel and Eclair à la vanille (with vanilla custard in it)
As a pastry chef just want to clarify pate choux is easy af and quite a basic cookery skill to cover it in chocolate and fill it with diplomate isn’t that complicated
The problem is they increase in size a lot which is how they get their hollow texture to fill by air/steam expanding the pastry like a souflee. Which means you can’t open the oven not even once
The really difficult part about this recipe is adding the eggs at the right time increments because if you don't then your dough gets ruined in my experience because it becomes too watery

They're actually pretty easy to make it's getting them perfect that's the hard part like the bread perfectly cooked and that kind of thing to up to a french bakery standards
Now i realise how talented my mom and my grandmother was at cooking. When i was a kid,my mom would make these every few months,and they were delicious.

I wouldn't say they're hard so much as they have a lot of different steps and components. At least not for someone who can legitimately call them self a pâtissier. I've been cooking for over 20 years, mostly baking, but I'm still only a home cook and even I can pull off an eclair. Sure I don't like to because I'm lazy and they take a lot of attention. But I wouldn't call them hard. Now Kouign-amann. There's something that's a difficult to make.
I completely forgot this existed, I used to eat them all the time when my dad brought it for me, even forgot how it tasted since its been a while I have seen these.

Actually, it is not as difficult as one might think. I just did it today. Yes, it takes some patience, but it's not so difficult or complicated that you could screw it up.
Once you get good at the dough and using the oven eclares and cream puffs are pretty easy cream puffs are like my life blood given they make me eat them every day and are the only thing I can think about at breakfast lunch and dinner
