I loved this growing up. Born in 64. So many fond memories flood my heart, mind (and tummy) when you cook the wonderful things I remember! 5 kids, Mom, Dad and Grandma. Mom and Dad took care of us with amazement. Huge veg garden, canning, going to other farms picking Asparagus, apples, etc that we didn’t have. They taught us how to appreciate and respect food. To say they taught us to appreciate and to respect them need to not to be said. Children of parents born in the depression.

This brought back many good memories, thank you! I'm a 1952 gal, and I remember my mom cooking this dish. My dad loved it, and so did us kids! I make it still today, and I still love it. What an interesting show you have too! Love the history! Seemed you were talking right to me. Dad was in the war, came home, met mom, got married and had us 4 kids. Those were wonderful years that we'll probably never seen again, but it's ok, we have our memories, right!?! Thanks again, and sorry for the long comment. Subscribed too!

Tuna Noodle casserole is one of the ultimate comfort foods for me. I even LOVED the Army MRE ration tuna casserole that just about all soldiers despised. I always got to trade my ugly meals for theirs and did well. Yes cheese, please. Asiago is my current favorite. So unique, so sharp, so good with tuna! Don't get me started on can openers. Yeah, we have come a long way baby! Tato chips on top? O heck yeah! My childhood friend's mom used to put crushed fritos on it.

I never grew up having this all the time, we started doing it in the late 60s and it was always a treat to get . Most people I know who got sick of this were Catholic and had it every Friday for dinner. I don't like cream of celery flavor and always used the Mushroom soup because of this. The tuna taste better if you add a bit a mayo to the tuna and then mix it in the casserole

Another great video. It is always fascinating to think about how culture, climate, geography, and other factors influence what we eat. I could definitely see why tuna noodle casserole would have been popular in the 1950's. I also like how you experimented with different tweaks but stayed true to the recipe. Thanks for teaching us the history of tuna noodle casserole!

In the 50's canned soup wasn't used. She made her own by adding 2 cups of milk, or evaporated milk, stalk of celery chopped fine, onion powder, minced fresh garlic, and salt & pepper to taste. I'm making it this evening and usually don't like to use canned soup but I have one of mushroom & one of chicken, and am going to use them in my recipe. It's very easy to make a cream soup or sauce base. I don't care for peas and don't remember my mother ever putting peas, carrots, anything of the kind in the tuna noodle casserole she would make us.

I grew up without casseroles. Can you believe it? It's just occurred to me that I had not even one during my childhood. My mom cooked typical German dishes like beef rolls (Rouladen) with dumplings and red cabbage or Schnitzel with peas and potatoes. I love vintage cookbooks, but since I'm allergic to many things I usually can't cook the meals. So I'm so happy I can enjoy your videos. Thank you and greetings from Germany. 🙋🍲🍴
@yesterkitchen
@yesterkitchen 4 года назад
So interesting! I never gave thought to casseroles not being as popular outside if the US. I can tell you that I am very jealous. I LOVE German food and to have grown up having some at home would be awesome! I actually love everything you mentioned! My husband is quite limited in eating right now so when I am not shooting an episode, I cook very differently. 🙂 That is also the reason I bring what I make to my Fire Department. Thank you so much for your support! I hope you enjoy the food history in my other videos! Maybe I should find a German dish to highlight one of these days! I have strayed outside of the US on a few of them. 💖🍸
@anjafink8996
@anjafink8996 4 года назад
@@yesterkitchen Oh yes, I'd love to see you cooking a German dish. 😍 Just one little wish, please no sauerkraut. 😊 It's such an outdated stereotype that was heavily influenced by what the American troops saw just in the south of Germany during WWII. The other areas have different dishes. Nowadays hardly anyone under 60 eats sauerkraut. I grew up on a farm right next door to my granny's home. She had a white tiled stove as big as a bed with lots of iron doors, brass railing and several fire chambers. Her maid started the kitchen at around 4 in the morning so that the family plus farm helpers could have their first breakfast (butter-sugar-cake and coffee), the second one consisted of bread plus jam or sausage spreads. There was always a soup on the stove and everyone who came in, like the postman, had to sit down and eat some soup and drink a coffee, no matter at what time of the day. I miss that time so so much. I didn't even take a picture of that beautiful stove. Regarding casseroles, there are such recipes in the old and new cookbooks but usually casseroles were a leftover dish, especially the sweet ones made of stale bread, fruits and milk with eggs. You have inspired me to dig out my antique cookbooks, German ones but also some from the US. Let's move that cooking spoon! 😄
@yesterkitchen
@yesterkitchen 4 года назад
@@anjafink8996 Oh wow!!! Thank you for sharing that!!! This is what I love about what I do! Especially that everyone had to stop for soup and coffee!! This is magic! I promise, no sauerkraut (although 1940-1980 is mainly what I focus on). But for you and all you have shared... no sauerkraut! 🙂 I'll start researching in the new year and definitely get those cookbooks out and move that cooking spoon!!!! Thank you for making my day!!!

I love historical recipes. I've been trying different recipes from my Grandmother's 1952 "The Wise Encyclopedia of Cookery." Tucked inside this book are several beautifully hand written recipes. The Roquefort Dressing was fantastic!!!! Put it on top of an iceburg wedge and sprinkled with bacon...yum! I used smokey blue cheese cuz I couldn't find "Roquefort." (Harder to find these days.) My Mama made this all through the 60's for us! All the homes in our neighborhood did the same 😁 My husband won't eat it to this day because we all had it so much when we were kids ( we grew up next door to each other, his sisters and I were good friends and we got together years later LOL).

Great video! My mother used to make this, and if she didn't have egg noodles, she would improvise and use bowtie pasta, if she didn't have mushrooms, she would just leave them out, and she didn't put in the cheese, but always complete with the all-critical crushed potato chips on top! YUM! I'll be scoping out your other videos, too, when I have more time. My mom passed away and took a lot of her recipes that were just in her head with her to heaven, so I'm glad I found you. My husband said he used to call this "tuna noona casserole." ;-) Question: does this freeze well? if so, before or after baking? (of course freeze without the topping).
@yesterkitchen
@yesterkitchen 3 года назад
Hi CJ, welcome! I'm so happy you found me! I'm also so sorry for your loss. I absolutely love her improvisations. Potato chips definitely! The classic recipes from the past have undergone so many variations based on whatever family was making them. I'll always give you the original and then I love to hear where they go. Tuna Noona, lol! I love how children say what they hear. I hope you find some childhood memories here. This is my absolute passion. And please keep me posted! As far as freezing.... yes, you want to bake it first and let it completely cool down. Then wrap it with plastic wrap and then file over that and let it freeze. It should be fine in the freezer for about two to three months. When you're ready, defrost it in the fridge. I hope you have fun exploring history through food here. Have the most beautiful day! 🍸❤️

My grandmothers were both reluctant and not very good cooks, and I think my parents were raised on the most basic canned-food meals, which they passed on to us. I was seriously like 30 before I realized this was supposed to be a casserole--we always just stirred a can of soup and some tuna into hot noodles. That was it: Three ingredients in a pot. I can make it from scratch now with mushrooms, sauteed onions and celery, peas, white sauce, etc., but I still do the old three-ingredient once in awhile.

Love ❤️ your channel. I have subscribed and will continue to follow your stuff. Made the tuna casserole as instructed . Brought back many great memories of growing up in the early 70’s and eating this during lent. My mom made this religiously. With that being said , it was just like my moms. Ok I did make a huge mistake. I prepared it and put it in the fridge a day before heating. I did put the chips on top the day of baking though. End result , noodles were too soggy. I think the recipe needs a tad bit more salt and an extra can of tuna. Overall it was a huge treat remembering my childhood . Thanks for putting these recipes together !!!!

Oh Yes, Tuna noodle casserole. Mom's recipe was pretty much identical to yours with the exception it had all cream of mushroom soup , peas and carrots and was topped with bread crumbs and the mandatory paprika that was on every casserole known to man in our house, and she always served it with a baked potato on the side, a very starchy meal, that was made pretty much every other week, I thought it was okay but bland, my mom wasn't one for anything salty or spicy. Today, once in a great while I will make some tuna casserole of my own invention, mine is made with a white sauce and cheese, Egg noodles,albacore tuna, onion powder, garlic powder, seasoned salt and black pepper and chopped sauteed onion, and Celery , top with more cheese, that's it . if I want a salad or veg, it is on the side, no baked potato. Thanks for the great memories you are conjuring up for us!

YesterKitchen I would be curious to know your take on beef stroganoff. Growing up the dish my family served as “beef stroganoff” never looked like the dish any of my friends’ families served. Many years later I learned what many German-American families like mine in the midwest served as “beef stroganoff” was actually a German stew, served with spaetzle in place of egg noddles, and renamed due to anti-german sentiment during WWI to mascarada as the pseudo-Russian dish. Like tuna noodle casserole I am curious about all the dishes and variations of the meal that came to be known as stroganoff.

@@cxa340 I love this! Beef Stroganoff is actually on my very long list. 🙂 I will book it for early 2020 as I am now working on my Holiday series. But I will definitely cover it! I like using frozen peas and carrots, as well as colorful sweet peppers! I get frozen three-color peppers from the store for it. (Bell pepper won't work though.) Cream of chicken will also work really nicely for this! Instant potatoes, bread crumbs and panko can also work as toppings. (Though I recommend adding parmesan to that.) You can cook this as a casserole as seen, or you can heati tt up on the stove and make a hotdish. Start the frozen vegetables first, in some oil and water on medium high heat, lower to medium before adding the cream of mushroom. Use a can of milk, add the tuna and then your drained pasta. If you want to use other noodles, bowties/farfalle noodles will work nicely! Other seasonings that'll work in this dish without complicating it that I've used are Italian seasoning, dill weed and Hondashi. I in fact used all three in the hotdish I made today for lunch!

My grandmother (r.i.p.), would verify everything you said, She hated convenience (didn't own a microwave, electric can opener, dryer (clothes) ). Everything she made was by hand and on her time ("you'll get it, when I'm done") and attitude. She would say she hated cutting corners in the kitchen,. She loved making casseroles, especially tuna noodle, hanging her clothes on her clothesline outside. She did it for our grand father, us (we spent time with her during summer vacation), her friends (church family) and anyone who was sick, lost a loved one (by death) or a friend. She said microwaves and refridgerators with automatic water and ice cubes in front were for lazy people. I spent many a summer loading those steel ice cube trays she had. I love convenience, be able to quickly get food on the table and your recipe. Sorry so long. Thank you so much. RIP ((Granny)).
