houseofknives.ca - If you only had one knife in your kitchen of course that has to be a chef knife. If you had a choice of two, you'd have a chef knife and a paring knife. Those two knives will do 90% of the work you need to do in the kitchen. So if you could pick a third knife, what would that be? The answer is simple: a serrated knife. Or in this case, it'd be a serrated bread knife.

I was also surprised that some people didn't know this, but then I remembered that buying fresh bread and cutting it at home isn't part of every culture

Very informative. I was just cutting fresh bread with a chef knife and it was so soft and the straightness of the knife felt awkward cutting.

Excellent upload. Wonder if I could add - sometimes I wish a 'bread knife' was called a 'bread AND tomato' knife. 'Bread knives' cut tomatoes *very* well. While Chef's knives can be used for tomatoes, somewhat like in your demo - they can have a 'crushing' effect on the tomato. Would like to see a demo comparing in a similar way as shown here. I like the way a serrated knife will 'grab' the skin on the tomato a little, a well polished Chef's 'slicing' type knife can 'glide' over the skin before piercing into it. Slicing (as opposed to serrated knives) are GREAT for meat and fish. Should anyone have similar thoughts to mine, you are probably aware of the specifically designed 'tomato' knife. It does in fact have serrations and a two pronged fork to aid in moving tomato pieces around after cutting. I feel it is a sadly underused and undervalued kitchen knife. Would welcome other views on the matter though! Always happy to consider others thoughts and ideas on such things!

Also being acidic tomatoes can ruin chef knives :)

A “well polished chefs knife” will destroy any tomato in its path. To me, these are useless knives if you have a quality/sharp chefs knife. It’s almost only useful to someone who doesn’t properly care/sharpen their knives. Look at any chefs knife video. They ALWAYS use a tomato as an example

To me, serrated knives sounded rough; I don't see any use of it but ur example justified; I also don't understand blenders with serrated blades.

The only reason a serrated knife will cut anything better than a chef knife is if the chef knife is blunt. Get a sharp chef knife and not a single crumb will come off that bread.

I do like serrated teeth knifes but only for bread more than anything, for everything else is very very impractical, you don't want to use a serrated knife for meat cuts, or thin slices of tomatoes xD

I was 25 when I discovered this and it was only due to me buying a knife on sale that came with a serrated knife. Had no clean straight edge knives one day when I needed to cut bread and the rest is history.

I know they exist, but my Chef's knife is so sharp and well maintained that a serrated knife is like using a chainsaw, while I have a lightsaber.

I swear. A sharp chefs knife is equally if not better than a serrated knife. Even in his demo he tried to make the chefs look worse, when it fact it wasn’t

Serrated will always be better for soft and spongy foods like cakes, bread etc. They tend to be around 10 inches in length (and they are much cheaper) which makes it easier for dividing cake layers and large rustic/artisan breads. Even a really sharp chefs knife will squish soft white bread, sponge cakes, pretty much anything really malleable, if you aren't careful. Have those serrations is important to grip onto the surface and provide support. Just based on blade geometry alone is what makes bread knives essential to your arsenal as they provide effortless cuts. Also, if he tried to make the chef's knife look worse, he would be slicing straight down with a lot of pressure (like those poor informercials). As you can see in his video, you can see him slowly slicing his way to the bottom. You can also see how the 8inch length works against him. He was trying to show the knife's best potential. If you compare the two, 99% of the time it would be a clear that the bread knife will surpass any chefs knife for it's dedicated application.

Agreed. I have both and I never use the bread knife. My Japanese chef knife slices through anything without the slightest squishing effect. And rock hard sour dough crust as though it was butter. The key is a straight blade and a very hard edge. Like a sushi knife.

@@MrJackieLantern I deffinetly made the sjef knife look worse, I can litterally preform almost pushcutting on bread wiht a non cerated knife. You can also tell he doesent use knives much by the way he holds the shef knife.
