Maybe also cutting flat the eyeround and folding everything in a spiral would make a better distribution of the rendered fat in the actual meat. The thinner both components are cut, the closer to a deconstructed burger, like a cursed puff pastry eheheh

That would make sense, but I've done that cut sous vide by itself and it came out juicy as you like and full of flavour, I didn't need any extra fat. Much lower temperature, it was lush!

If you haven't already, try the braciole method - thinly slice the round as if it were a spiral, pound it to an even flatness; choose a stuffing mix to cover the meat, roll it up, tie it and sous vide it. My family always stuffed it with breadcrumbs and parmesan, and simmered it in the tomato sauce for several hours, so I am curious how it will turn out in the sous vide, maybe with a mushroom stuffing. I'm even thinking just spread with beef tallow and rolled up to try as a base.

Instead of surrounding an eye of round with fat, try barding an eye of round with fat. Then cooking at 135 for a minimum of 30 hours.

The issue with searing the eye-round before sous vide, is that you close the tissue in the meat, so the pork fat can't enter the eye round. What I would do, is throw the eye-round in raw no searing, poke a few holes in it. Then cover it with pork belly and barbeque it low and slow, brisket style. I would also cover it entirely in fat, so no end of the eye-round is visible.

Searing doesn’t actually lock in juices. That’s why you can baste steak with butter in a frying pan.

It would be interesting to either "lardoon" the eye of round with beef suet strips (though - technically - lardooning would be done with pork fat, and not beef fat/suet), or inject it with melted beef tallow (using one of those "hypodermic" style flavor injectors) before cooking it sous vide at 136 for 24 hours. Since the actin and myosin proteins in the roast start cross linking at 140 f (which is what squeezes much of the moisture and rendered fat from the meat, thus drying it out). By keeping the temperature well below 140, you shouldn't squeeze all of that moisture out, thus keeping the meat much more moist. Plus, by interlacing or injecting the fat into the interior of the muscle fibers, you should get a fairly even distribution of that fat with its good beefy flavor. Just my 2 cents worth...

My favorite way to make eye of round is rouladen. You pound out some steaks super thin, wrap it around pickles and cook them in brown gravy.

Every one of your videos makes my mouth water, yes, even the pineapple experiment... well the first part of it did. I would love to see you try to sous vide some kangaroo. It's a very lean, strong flavoured meat, and quite gamey, but I would like to know how you would go about cooking it!

Here in Chile we have this thing called "arrollado huaso" which is kind of the same concept, a seasoned meat in a roll of pork fat. You should look it up, it's a traditional dish

It might work better, if holes were made in the eye round with a bamboo or metal skewer so that the fat can drip into the holes as it melts. A similar technique is used when coring an apple and filling it with a mix of brown sugar and maple syrup (use the bottom and top of the core as plugs so the sugar won't escape). The holes made in the apple with the skewer helps to spread the caramelized sugars inside of the apple. (Which is usually wrapped in foil and cooked over coals).
