There’s a lot that has to happen to get all those bubbles in there.
Note on reserve requirements: My main source (Sotheby's Wine Encyclopedia, 4th ed., p. 176) says "Not more than 80% of any years harvest may be sold as vintage, so at least 20% of the best years' harvests are conserved for the future blending of non-vintage wines." And champagne.fr (www.champagne.fr/en/from-vine-...) says: "In good years, every Champagne producer is required to set aside a percentage of their wines as a precaution against disappointing future crops..." I interpret this to mean that while a house presumably could save reserves during any year if they wanted to, the only legal requirement to do so is during a "good" year (i.e., a year when the house declared a vintage). I'm supplying this information because I have heard wine professionals claim that the legal requirement is to reserve wine from every year. If anyone thinks I'm misreading these sources or can provide further information, please let me know!
Also, I misspoke when I said that a vintage Champagne is made exclusively from grapes grown that year. Under E.U. law, a vintage can be assigned for a wine, still or sparkling including Champagne, as long as 85% of the wine in the bottle is from the named vintage. My impression is that in practice the number in the actual bottle for a vintage Champagne is quite a bit higher, but the law is 85%.
Oh, and finally (I hope), my memory of high school French failed me yet again, and my pronunciation of "Doux" should really have been more like "Do" or "Dew."

I though that when an NM makes a cuvée from its own vineyards it always will remain an NM as you can not switch to RM. Once you purchase fruit and or sell you are always an NM even if you have a special bottling coming from your own vineyard? I am a bit perplexed 🤔, I am going to go back to my own notes from the guild. Now this comment is towards the statement you made around the 10:20-25. If I heard you correctly I think you mentioned that when an NM does produce a bottling from its own vineyards it can then label it as RM? I am going back to listen again just in case I misunderstood. However I do listen and enjoy your content! Rock on

So I went back to my notes and read percentages and in some instances (although very rare) an NM ( Maison) can use RM on a SUB labeling or brand. Now this makes me think what does the law constitute as a SUB Label..... or perhaps another brand? Eeeeek brain hurts! Lol

You're right about this, I think. The source I was following when I put the cast together was the Society of Wine Educators 2015 CSW Study Guide that on p. 113 says, "These 'grower Champagnes,' which include both small, artisanal wine products and top-tier wines from larger houses, such as Krug's Clos du Mesnil and Bollinger's Veilles Vignes Françaises can be recognized by the initials RM...on the label." I took that to mean that offerings from house-owned vineyards were labeled differently, but, on checking the labels for both of those wines, I see that they're also designated with an NM. Thanks for pointing this out. I'll pin this comment in the hopes that others can see it. Cheers!

Thanks Unknown Winecaster! Largely because of your Wine Casts and the fact that it is a designation encouraged by my company, I am on a journey to obtain CSW certification. I’m a Distributor Sales Rep. I’m about 45% through the material of the CSW text. I find your casts to be an excellent resource, I often watch following the studying of a particular subject matter. In this case, I worked through the Champagne material and then followed it up by watching your Champagne cast 1 & 2. Your a tremendous resource to accompany my studies. Regards.

Thank you for this podcast. I.have attended the Tour du Champagne in Cote du Bar the last 2 summers. Probably the only American each time! Slowly becoming a champagne lover, and learning about winemaking, terroirs, pairings etc.

I love your casts! One question. How do the Champagne houses differentiate between the 'bad vintage' NVs and the NVs that contain some of the good stuff?

5:27 it is not true that global climate change there are more vintages. In fact they are in line with previous decades. The 70s had perhaps the highest average amongst the larger producers of vintage Champagne.
