Saw a documentary that used an ancient Egyptian recipe, and also experimented by drawing the water for the fermentation process from a dirty duck and duck poop filled pond next to a tavern. It made the drink clean at least.

I learned to brew homemade beer with a German master brewer. The amount of care and precision to make it, even at a small, homemade scale is impressive. The formulas involved in the recipe, the exact temperatures in the various stages of the process, the timing required... It still astonishes me to this day how the hell we discovered and perfected beer. Too bad we have forgotten as species how awesome we can be!
