All Episodes is a category where you complete all mainline story missions, which are episodes 1-8 in each world, then beat Bowser. The final shine count is 58.
The timer starts at 5:40.41 to account for the skipped cutscenes at the beginning, this timing method is known as hacked file, as it utilizes a modified save file with flags marking those cutscenes as already watched.
