Shortbread is traditionally a Bridal cake in Scotland. Rich Shortbread has three ingredients - plain flour, sugar and butter, but this recipe uses vegan butter. It can be quickly and easily made and baked as Fingers or Petticoat Tails. Shortbread keeps well and has a delicious flavour.
By using vegan butter, these well-known cookies can be enjoyed by vegan eaters, vegetarians, flexitarians, omnivores and of course plant-based consumers.
Ingredients:
225g/8oz all-purpose flour
75g/3oz organic white sugar or sweeteners of your choice
150g/5.5oz vegan butter

Notes:
Shortbread Finger Size: The thickness of fingers can be around 1cm to 2 cm/1/4” to 3/4“, the width of the finger should be at least 2.5 cm/1” and the ideal length is 7.6 cm/3”.
