The reason for the rubbery texture is the manufacturer's instructions for reheating. The only lobster that should ever go in boiling water is a live one. These frozen ones should be shelled cold, then either given a VERY quick zap in the microwave, or better yet eaten chilled but with hot butter on the side.

I've had lobster many times from really nice restaurants to my friends house. The tail is always sort of chewy/rubbery. Doesn't matter how you cook it. It sucks. I don't like lobster either unless it's the claws. The claw meat is unbelievable soft and tender and flavorful but the tail is like shrimp and the texture is disgusting.

I found the better way is steamed, do not know why but was really good, i eat regular lobster once a year, always a fun time...but eating a fresh one in cuba with homemade aiolli butter is heavenly! I still can taste it!

@@wombat5252 Restaurants in a lot of places overcook seafood to cater to the masses. People think that if the fish looks like shredded coconut = flaky. Anything higher than 140 degrees on lobster, hell most seafood = is overkill.

You can eat part of the lobster body, but you should have removed the poop chute first. Here in Nova Scotia, we still have the live lobster tanks in the grocery stores.

My guess is that lobster thawed somewhere then frozen again and was spoiled. If it has any ammonia odor at all it’s history. I did get ripped off on frozen stone crab claws a few years back and learned a lesson. Good video as always.

If buying thawed: Always try to look under the pricetag too. Bought some king crab legs from Sams Club once, got them home, removed the plastic: Deep greenish black damage to the leg, meat was rancid about two inches in either direction. They hid the damage under the tag. (needless to say I returned it and got a refund, but had a similar issue buying fresh fruit at a Kroger store recently. Fruit on display all had multiple stickers on them, I just assumed someone had fun with the sticker gun - nope. They were covering damage, blemishes, and mold spots).

It only produces that toxic ammonia if it dies before it's cooked. Once it's cooked it can't produce that and is just like any other cooked seafood or fish, i.e. keep refrigerated and eat within 3 days. But if it's defrosted and refrozen that's not good. I think it was just chewy because it was cooked too much, being boiled once is enough and you never cook or even reheat them again after that. In restaurants if they're not served directly after cooking, which is only in specialist seafood restaurants anyway, they're only ever served cold as an ingredient in all kinds of dishes. We used to make a terrine, wrapped in leek. Kind of complicated and a pain in the ass but that's what you get for working in a French restaurant.

How much do I love lobster? Most years we travel from Ontario to southern Maine for a few weeks. Every other day I'll head to the lobsterman's house (garage) and purchase 7-8 fresh live culls (lobsters that have a blemish, missing claw etc.), take them back to the campsite and cook them up for my wife and I. Nothing tastes better. The sweetest meat you'll ever eat. Price per lb is usually less than ground beef.

Me and my dad overnighted 2 live lobsters straight from maine. They arrived alive and we ate them later that night. I remember correctly you're only supposed to eat the tail and the claws. Anyway we boiled ours and they came out amazing. Then again they were like $100 or something lol.

I really normally do not leave comments but I do have A LOT of experience with lobster... this is probably going to be lengthy but... Lobsters used to be so plentiful they were used as food for prisoners. I was a chef at a Country Club and on Saturday nights we did a lobster night. The members could have one lobster any way they picked, prepared by us. We had about 100 live lobsters delivered every week. My goto for killing was a chef knife held to the mouth right in front of the brain. With a quick jab with the other hand the lobster instantly dies. I know I know that lobsters do not scream but I think they feel. I was tired of my hands being pinced from the rapid curling of the tails as I plunged them into boiling water. The weight of the lobster determines the cook time. There are a lot of ways you can cook it. Some preferred broiling. That's relatively easy. We did a "bath" for them. In the same large cooking pot you put in a little bit of carrot, onion, and about 1/4 of a lemon, and about a cup of white cooking wine (salt and flavor). You let that boil for a while to let the flavors meld together. The carrot makes the lobster meat sweater, onion enhances flavor, and lemon almost always makes seafood MO' BETTA!"😁 I usually SLIGHTLY undercooked my lobsters because some residual cooking will take place as it was waiting to be taken to the table. If that lobster you had was already fully cooked and then frozen I'm sorry but that's for soup or something. I really avoid the green myself. Whenever there were live lobsters left there one of us chefs and cooks could take them home. For about 3 months I left with around at least 5 live lobsters. I had so many I grew sick of lobster for about a decade. Your lobster was waaaaaay overcooked and freezing a cooked lobster would not be on my list of things to try. Just adjust things for cook times and your mind might change, or it may not be your thing. I prefer snow crab as opposed to king crab. A lot disagree with that but I DO NOT want to live in a world where everyone agrees with me. That's just boring. Enjoy. Around me we have stores Shoprite or Price Chopper where live lobsters go on sale for $5.99/ lb. They usually weigh about 1.5-2 lb and cost about $12-$15. They usually offer free steaming but I wouldn't have my lobster cooked there. There are little restaurant areas of these stores where you could eat what foods you get there but I opted out of that.

Yeah you're right on it being overcooked, if it's bought frozen (obviously cooked first) then it should just be defrosted naturally and be eaten cold. I worked in a French restaurant and must cooked dozens of them but we never served them hot anyway, they were cooled off, the meat taken out and used as part of another dish, we used to make leek and lobster terrine where you had to wrap the leek around the lobster meat. I tried killing them with a knife too but I'd read that you push the sharp knife in at the back of the head, but that didn't kill them and they started flailing with their claws so I stopped doing that. Later I read that they don't actually have a brain and nervous system like mammals or even fish, the nervous system is down the spine. Apparently the most humane method is to put them in the freezer for about 10 minutes - still alive of course - before boiling them because this will almost put them to sleep. But of course working in a restaurant that was never an option, our freezers were always too full plus the head chef was too much of a dickhead to allow it.

Funner facts: Isopods (Woodlouse, or rolly pollys) are crustaceans and are closely related to lobsters than to cockroaches. They're the only crustacean to evolve fully to living on dry land. During the Carboniferous period 360-300 mya oxygen content was much higher than today (35% as opposed to our current 21%) as a result of this terrestrial arthropods were much larger than today, centipedes 2 m (6.6 foot) long and a spider cousin the size of a house cat. Also, the period gets it's name from the fact that this when most of our coal beds formed.

this is due to a lack of knowledge on how to keep a lobster fresh sailors would kill them immediately, and it was an unknown fact that lobster would rot themselves once killed via a special gland so all lobster recipes back then were ways to make spoiled lobster palatable

Live lobster is practically free -- if you can catch it yourself! Only half-joking. I spent a summer at my stepfather's home on the southern bank of the St. Martin River, over in the Eastern Shore of Maryland, back in the summers of 1989 and '90. At the time, blue crab meat was going for about $16 a pound (I think - may have been more!). But we could just go to our little pier on the river and catch Jimmies all afternoon with a chicken wing on a string and judicious use of a net. Was incredibly fun and we saved tons of money getting, cooking, and picking our own crabs... and ours were always well-seasoned with a shton of Old Bay because Delmarva Reasons.

You cant cook frozen seafood without thawing it out first. Comes out rubbery everytime. BUT, if you must, you can let it sit for about 30 mins and it will change the texture completely. Probably about 80% less rubbery if you let it cool off. The tail muscle relaxes. Of course its not as hot so make sure your butter is hot.

@@currencytrader4389 he did say it around 2:45 that he thawed it. but the instructions are wrong as well. you dont boil an already cooked lobster against for 2-3 minutes, which is almost how long it takes for a live one to cook, that would be 5 to 7 minutes. a cooked one just need a flash heat for maybe a minute at the most. or eaten cold.

Love lobster! I worked a lot on the east coast and had them various way from boiled to broiled. I used to buy them here in Wisconsin for our New Year's Eve dinners, throwing them on the old Weber Kettle. I have a picture of me cooking ribeyes and tails when it was like 7 degrees outside. Still buy them for New Year's but just the small 6 ounce ones not like the two pounders that I'd get in the 1990's. My family's theory on this was you start out the New Year eating something really special because six months later, it might just be beans and wieners and you might just be thankful for that! With that said, I bought one of these lobsters in a box a few months ago on Amazon and I might just have to pull it out of the freezer and give it a try though I was thinking about just thawing it in the fridge instead of boiling it again. Thanks for your reviews sir. They are honest and down to earth and that's refreshing these days!!

Also the correct way to cook lobster is to boil it in extremely salty water. And remove the rubber bands before you boil it. On the east coast we take the ocean water and add more salt the boil the lobster in that. Obviously this is better done outdoors so your house doesnt smell like boiled ocean 😅😊😅

best lobster I ever had, was eating a LOBSTER ROLL at a port side place in BAR HARBOR MAINE.. not a great restaurant..but a sorta cafe at waterside. I need to go back there.. YUM!!!! THAT WAS PROBABLY COOKED AT THE SAME TIME IT WAS CAUGHT THEN FLASH FROZEN TO PRESERVE IT AT PEAK FLAVOR

If there is ever a storm locally, it's worth checking the local beaches for stunned lobsters and crabs on the beach. My father and I ended up with about 12 lobsters and 4 crabs a couple of years ago in the UK when we decided to go out on a whim. Sounds like the instructions made you over cook it dude. If in doubt, shred it with melted butter, lemon and parsley and have it in a nice brown bread sandwich.

Eat the tail and claws and cook the rest to make stock. Then make rice porridge out it but make it thick. I've had that in a Japanese restaurant and it was delicious!

Ok now you lost me when you said you don’t like lobster. I’ll summarize without watching it. It’s a watery, soggy mess and there’s not much meat to speak of. I can’t watch. I was raised on seafood in the Chesapeake and Tampa bay.

The only lobster I've had that wasn't rubbery/tough was when I bought just the tails, opened them up and broiled them with some garlic butter. I wasn't a big lobster fan at that point and was surprised that it was really good, I wouldn't eat lobster any other way now.

In Newfoundland lobster is fairly easy to get, So grocery stores always have live lobsters and crabs

I'm just astonished that it is exactly as described on the box label, an actual complete frozen lobster. I'd guess that the reheating by boiling might be what made the tail meat extra-rubbery, over-cooking seems to be one of those things that can do it.

Lobster was nice to eat before I became deathly allergic to all crustaceans, but over the years I've realize their just big "Sea Bugs". We still have a grocery store chain that still has a fresh fish section with a live lobster tank.

When I was a kid Krogers and I think food Town in Toledo Ohio had frozen lobsters from in a plastic tube, you snip off the top and slide it into boiling water, it is where I learned to like lobster

for lobster tails, One way to make em less tough is to shred the meat. The reason it's so hard is cause of the the fibres of the muscles are tied in a knot. So shredding it makes a big difference. edit: obviously the cooking makes a difference too. What I mean to say is that even a fresh lobster cooked just right might still have a tough tail for some people (my father has issues with any food that's a bit though) and when I told him to shred the tail he was doubtfull but he did notice a big difference.

Since it's already cooked, I wonder if it would be more palatable if you only thawed it and cut it up (just the tail and claw meat please) and prepared it in a lobster roll, rather than trying to reheat it and serve it warm. But I'm not willing to gamble $22 to find out.

I'm not a lobster fan either. In the few times I had "Surf&Turf" meal with lobster tail and steak, I traded a buddy my lobster tail for his steak. Being a Native Floridian I love crab, shrimp, oysters and other seafood. To me lobster has a sharp aftertaste I don't care for.

If you're ordering something called Surf and Turf you will almost never get Maine lobster tail but the other cheaper species that don't taste as good or are always overcooked because it cooks so incredibly fast

Kitchen Tip: NEVER eat any shellfish like scallops, clams, lobster, mussels, etc when it's been frozen first. Frozen shellfish rarely has the appropriate taste & texture it does fresh. Either eat it freshly caught and prepared or go with beef or poultry instead. When it comes to fresh lobster... After cooking it... Take a rolling pin a put the lobster legs under it. Gently roll it over the leg to extract the lobster meat out of the legs. It's the sweetest meat on the entire lobster.

LOL you're so funny 😂 it did look rubbery . I don't like lobster either. I don't like Flavor of it. I've cooked it at home and tried it in some nice restaurants I just don't like it. I'll take crab legs any day. I love all Seafood except Lobster. I enjoyed this video see you in the next one😊

in Canada we have a grocery store called Loblaws and they sell Presidents Choice Frozen Lobster Roll Kits, man what a travesty those are. these days most grocery stores that sell live lobsters will cook it for you while you shop so you dont have to when you get home.
