Its a stabilizer, which stables and thicks the recipe. Some say it as thickening agent. Dont confuse with stabilzer or thicker. Check E415 in ingredients list of the products.

Ok. At low Temperature , use high speed shear mixture. At high temperature, it mix automatically. But may make lumps if put all together. So Use high shear mixture.
