Xoi Lap Xuong Tom Kho (Vietnamese Sticky Rice with Chinese Sausage & Dried Shrimps)

Here's my instructional video and recipe for Xoi Man Lap Xuong Tom Kho! This a great meal prep dish and a hit at potlucks! The kids seem to like this too so it's perfect to pack in their lunch box :)
There are many variations of sticky rice but this simple version with Chinese sausage and dried shrimps is my all time favorite. Hope you enjoy the recipe but please add more ingredients to your liking if you want!
Note: There are several ways to prepare sticky rice such as steaming or in a rice cooker but I'll be showing you how to cook it in a pot on the stove. You can prepare your rice however you wish but I recommend adding 1 tbsp of soy sauce to the rice while it cooks to give it more seasoning as you'll see me doing in the video.
Serves two bowls
Ingredients:
1 cup sweet (glutinous) rice
1 2/3 cup of water
1/2 cup small dried shrimps
1 Chinese sausage (lap xuong) sliced thinly
3 chopped green onions
2 minced garlic cloves
1/2 cup fried shallots
1 tbsp oil
2 tbsp soy sauce
2 tbsp oyster sauce
pinch of sugar
Instructions:
1. Add rice to a pot plus 1 2/3 cup of water and soak for 1 hour.
2. Soak dried shrimps in warm water for 1 hour then drain.
3. Place the pot of rice on the stove on high heat and add 1 tbsp of soy sauce. Bring to boil.
4. Once it boils reduce to medium low heat and cover the pot with a lid leaving a slight opening. Cook for about 10-15 minutes or until rice has absorbed all the water.
5. Once rice has absorbed all the water remove the pot from heat and cover the pot fully with the lid. Let it sit for at least 5 minutes.
6. Heat 1 tbsp of oil on high heat in a wok/skillet.
7. Add in the minced garlic, chopped green onions, sliced sausages, dried shrimps and cook until the sausage and shrimps soften (about 30-45 seconds).
8. Add in the fried shallots, 1 tbsp of soy sauce, 2 tbsp of oyster sauce, pinch of sugar and stir well.
9. Add in the cooked sticky rice and mix everything together well.

Is this on the saltier side? I ask because Oyster sauce is really salty & that’s on top of soy sauce. Thanks
