Dehydrated food will last just as long as freeze dried as long as it's vacuum sealed. You can also fit more in a container since the food shrinks, freeze drying doesn't do that. Most people can afford a dehydrator, $150 for a really nice one, while a freeze dryer can be in the thousands, and buying freeze dried food is expensive. I think it's better to dehydrate than give up before you start because you can't afford other options.
