Poke with pointed stick or needle soon after you boil, then after it’s cook cut into small pieces and sauté abit in oil it will taste better and crispy, also add a bit of fats while mixing innards
The pork sausage broke because where i am from we do the same we put dry banana leaves in first then put the sausage on top to boil that keep it from breaking
Making of sausages is absolutely great. But if you add blood along with what you had mixed will give you another level of Sausages .kindly try next time . cos, pork blood tasted yummy for sausages. Liver blood and other meat parts for more taste..you ate up so greatly.
