🍔 🍔 🍔 INGREDIENTS & INSTRUCTIONS

Gluten free and healthy BURGER BUNS (whole grain)
🍔 🍔 For activating your SOURDOUGH-STARTER you need:
50 g gluten free sourdough starter (Link to Video below - !explained for beginners!)
50 g flour (millet or whole grain rice)
50 g lukewarm water

INSTRUCTIONS: First you need to activate your sourdough starter. To do this, mix all the ingredients for the sourdough in a small bowl and place it covered in a warm place for about 6 hours, or until you can see bubbles and the dough has noticeably increased in volume.
If you are not very familiar with sourdough, I recommend my videos on the topic (see LINK above). In it I explain to you step by step how you can easily make gluten-free sourdough yourself. It's not difficult at all!
🍔 🍔 INGREDIENTS / MAIN DOUGH:
Mix in a big bowl the following ingredients and set it aside for one hour. (More information about the instructions you will find in the video.)
Activated Sourdough Starter (see above)
100 g boiled, finely grated potato
20 g finely grated raw apple
20 g whole psyllium husks
20 g chia seeds
30 g sesame seeds
500 g lukewarm water
Finally, mix the dry ingredients (see below) thoroughly in a separate bowl.
🍔 🍔 DRY INGREDIENTS
100 g whole grain rice flour
130 g oat flour
100 g buckwheat flour
20 g chickpea flour
75 g tapioca starch
75 g potato starch
15 g salt
Optional topping: sesame seeds, sunflower seeds, poppy seeds….
INSTRUCTIONS: Then put the wet and dry ingredients in a very large bowl and knead the dough as shown in the video. Now cover the dough well with a damp cloth and a lid so that the dough cannot dry out. The dough needs to rise in a warm place for at least 6 hours. Depending on the temperature, it may take longer or shorter, even over night.
Then form burger buns as shown, sprinkle them with water on top, cover them again (with another tray or cling film and wet cloth on top) and let them rise in the warm for another few hours. The buns are ready to bake when they have increased in volume (aprox.) by about a third.
Bake in the preheated oven on the hot air program with steam (covered with a tray) at 180 degrees Celsius for 30 - 40 minutes. After about half the baking time, finish baking them uncovered.
TIP FOR BEGINNERS:
If you still feel unsure about baking gluten-free with sourdough, simply add a tiny amount (approx. 5-10 g) of fresh yeast. Then nothing can go wrong!
