I suspect part of the problem is fewer government inspections. I worked in a meat packing location.....year one MONTHLY visits but by the time I left it was ONE inspection every 4 months. We all know when the Cat(government oversight) the mice(corporate)will play. I even witnessed when a USDA inspector was onsight teams being told to repackage past date lunchmeat with a new date instead of destroying like they are instructed to do. They had a large team open all old packaging while inspector was on break. Disgusting but a result of not putting funds where they are needed.

When I got out of high school, I started working at a meat packing plant. If he was busy, they would grab me and my friend, give us the hammers and ink pads. Then we were told where on the carcasses to stamp. So I can proudly say that I was a government meat inspector! Not bad for a high school education and no official training.
