Something everyone should know about refrigerator safety.
The temperature sensors used in all refrigerators aren’t perfectly calibrated. If you have a digital thermostat on your fridge, you should know that it isn’t accurate.
Some temperature sensors can deviate up to 12 degrees. That is a big issue for food safety.
The only sure method of measuring the inside temperature of a refrigerator is to use a fridge thermometer. These ten dollar instruments can help us avoid food poisoning and spoilage.

My name is Scott and in 2015, I bought a Ram ProMaster City to live in. Even though I didn’t know much about RV’s and campervans, I set about building the van out as a minivan camper. And in April of 2016, I moved into my minivan full time.

Hi Scott! Scientist here, and we are obsessed with the accuracy of refrigerator and freezer temperatures. We routinely outsource vendors to monitor temperatures 24/7 remotely just as a back up. The stick meat thermometer is not the best but if you put it in a small amount of water in the fridge, you will get a more accurate read. There are a lot pricey calibrated digital thermometers, but we use old fashion mercury based calibrated thermometers still inside the compartment. For the chest freezer, we use the refrigerator one that you mentioned. Excellent informative video! You could sell ice to Eskimos and I’m still trying to figure out if I need a heater you reviewed a few weeks ago!

FYI- Restaurant standards for fridges is 34⁰F to 36⁰F.👍👍👍 Milk will last longer than the tag says if held at colder temps.

FYI I been using a digital frig thermometer like Scott's in my refrigerator here at home and so far after more than a year it's earned the moniker "Old Faithful" :)) But will now keep an eye on it.

I keep my 12 volt refrigerator in my car (that I have set up for camping). I live far from a store so it helps to get frozen foods home. This is a great video. I’m going to get a thermometer for it. I actually never thought of that. Thank you.

Throughout the years I think my stomach has become like a steel drum. as a child my mother would leave the dinner out on the table top until the next morning & then put it in the fridge- then feed us those leftovers so I imagine I'm quite prepared for any kind of stale/rotting foods.

Liked your video, wait.....had to thumbs up it, too.👍. Yes, never trust your refrigerator. Especially be wary of it after you just filled it! So now, thanks to you 👍, I'm going to remember to keep the freezer stocked with a couple of good-sized plastic ice packs in case my refrigerator decides it's just done. It never gives you a warning. One hour, it's cold, enough ( hench, the reading on the thermometer), then upon opening it again later, something just doesn't seem quite right ( again, the reading on the thermometer). Then it's just a matter of setting the oven, getting the BBQ sauce, heating up the oil, and getting to cooking. Fortunately, because of having the foresight to deal with such a unfortunate situation, you now have the ice packs and can save the leftovers!

Hi Scott, good info about watching your fridge. A couple of hours if the fridge somehow turns off could be devastating if you're outback. I have a dual range thermometer on my rear view mirror. Have 1 sensor in the fridge which is set to 5C and one in the back of the van. So if van is too hot I can turn on the rear aircon so when I get to camp the back is at a nice temperature. But more important is to keep an eye on the fridge while I'm driving, nothing worse than wasted food and warm drinks lol

That would be BI-METAL. Just like the old school thermostat for house heating. The two metals stretch and shrink at different temps. That's how the display gets its reading.

I just noticed that my little thermometer, the one like yours, needs replacing. It is no longer accurate. You are correct. They do wear out. Mine is probably over 10 years old.

For fridge or freezer temperature problems I have a Thermoworks digital readout thermometer alarm that can alert me to possible problems. For accuracy of the fringe primarily Consumer Reports says to put a glass of water in the refrigerator and the probe in the glass for the temperature which may be difficult for your size unit. The reason they say this because when the refrigerator comes on, a large appliance they have a blower or fan and that air will be pretty cold compared to the rest point of the water used for testing.

Hello Scott, Good information and good point. I did not think about the importance of having an internal refrigerator thermometor. I'm going to get one. Some people insulate their 12 volt refrigerator/freezers to help with their efficiency. I love the basket in my 12volt refrigerator to separate the storage areas. I have a bit more room than you so I bought 2 of the 37 quart 12 volt units. One for beverages and the other for everything else including ice cream. Appreciate your van dwelling tips. I know you have been doing this a long time and your words are golden.

I use a weather station with 3 remote sensors.. I keep one in the fridge. One in freezer. And one next to lipo4 batteries. I not only get temp, I get humidity. And I can check high/lows in the last 24hrs.. I also connected my lights to flash when temperatures get to high..

Thanks for showing us what's inside your refrigerator. If you can get by without a refrigerator in the first place, then that would be ideal. In your case, it looks like you could use powdered milk instead of liquid milk. And farmers' market eggs don't need to be refrigerated. And hard cheese doesn't need to be refrigerated either. -You might not be able to keep your yellowbird sauce though.... Hmmm...

Yellowbird doesn’t require refrigeration. Putting hot sauce in the fridge dulls the heat from the chilies.

Great advice! I had a fridge go out in an apartment I rented more than a decade ago. And then the replacement fridge went out within 2 weeks. I got lucky, though - I added a fridge thermometer after the first failure AND it was a cold enough winter that I was able to transfer my food to the balcony (in a cooler, to keep the racoons away). So I didn't lose as much food as I could have. Landlord was good, too - they replaced the unit, each time, right away.

Two bits of helpful info Scott...make sure the thermometers are calibrated correctly and full fridges use less energy, even if it's an empty container.

Yes, having cold stuff in the fridge, acting like a cold pack, helps keep the temperature steady. Solids hold temperature longer than gases.

So the digital thermometer is just a decoration? I kinda know my fridge is just okay when the eggs are a little gelled but not frozen and the milk is not frozen but ice cold but I might consider purchasing one. Also, I can hear my mom telling me to close the fridge for some strange reason.

Some fridges displays can be calibrated to display the accurate temperature. I haven’t calibrated mine because it’s confusing and I find it easier to simply use the thermometer

I always wondered how grocery stores could have those big open chest freezers that don’t have lids or doors; it makes sense now! Also, I found some mini bottles of Yellow Bird hot sauce at Walmart for $1 a piece; I’m going to give those to my dad for Christmas. Interestingly, I couldn’t find the bigger bottles in the aisle at all at my location.

I knew my fridge wasn't as cold as the readout said because I had it set below freezing and nothing was frozen. (That was okay because I didn't want to freeze anything.) I bought dual zone wireless thermometer a while back. One sensor went in the bottom of the fridge and the other is just in the van. The fridge claims it's 29°F but the thermometer says it's 33°F. My other "thermometer" is if the hamburger is still pink instead of brown after a few days, then it's cold enough. 😉

Great video. I have that exact same refrigerator, thermometer for the refrig. in my apartment. Apt. refrigerators especially watch out to make sure they properly cooling, you know landlord doesn't check that stuff when they rent you an apartment. For those apt. dwellers it is especially important that your refrigerator is keeping you food cooled properly. Great video, learn all the time from Scotts videos. Oh and was my first time in REI. The stick thermometer is easy to calibrate in a glass of ice water. So that’s the one I trust and measure off of.

Another fine video. Very informative. Up to now I've been using two frig thermometers also, a digital and a traditional without knowing all the ins and outs of why I am doing so other than your recommendation made in a much earlier video. Now I do appreciate why.

One thing that I didn’t mention is that I only buy thermometers that have an NFS certification. Those are the type we used in the restaurant industry. I don’t fully trust a digital thermometer because of the same reason why I don’t trust my fridge thermometer. Although some digital thermometers can be calibrated and they are handy.

I've been waiting for someone to bring this up, thanks. On a different note, I've been testing an Iceco I've purchased for my transition to nomad life, and I've noticed some condensation collecting underneath. If this were stationary in my van, I would be concerned about molds forming underneath it. Have you noticed any moisture under yours? I've elevated it to allow some airflow but I see many setups where airflow is lacking.

Iceco makes a great product. That’s the premium brand versus the Setpower that I have but the same company. I’ve never noticed any condensation under my fridge. Is it condensation or could the drain plug be leaking?

Hi Scott, how do you know how to set it and set the freezer part. I gotta get a frig thermometer. Thx, I didn't know this stuff. So what number do you put on setting please. Excuse me. I'm old and not very technical. Oh, 40 degrees I'll use like you. 👍 😊❤

I should have put it up on screen as most everyone missed the actual number I set my fridge at. I like my fridge to be right at 32°

Ummm.... just having an anolog thermometer doesn't mean anything. It, too, can be WRONG. You need one digital or analog that can be ..... CALIBRATED. 50/50 ice bath set to 32⁰F. 🧐🧐🧐🧐🧐
