Focaccia is the easiest bread to make in the world. A few simple ingredients and some basic techniques will give you an unbelievable result!
Ingredients:
(FOCACCIA):
Flour. (4 cups/ 512g)
Yeast. (2 tsp/8g)
Salt. (1 1/2 tsp/8g)
Water. (2 cups/452g)
Olive Oil. (3-4 tbsp)
Oregano. (to taste)
Salt (to taste)
(ROASTED GARLIC BREAD):
Garlic bulb (1)
Focaccia slice (1-4)
Butter (1-2 tbsp)
Salt (to taste)
Oregano. (to taste)
Mozzarella Cheese (20g)
Cheddar Cheese (20g)
Olive Oil (1/2 tbsp)
(ITALIAN SANDWICH):
Focaccia slice. (2)
Butter (2 tbsp)
Cream Cheese (4 tbsp)
Bologna Slices (9-10)
Pastrami Strips (4-5)
Mozzarella Cheese (30g)
Salt (to taste)
Oregano (to taste)
Honey (1 tbsp)
Instructions:
(FOCACCIA):
1. Mix all your dry ingredients in a bowl with a whisk.
2. Add your water. Make sure it's lukewarm. If not then microwave for 15 secs before adding.
3. Take a spatula and mix using strong circular motions. KEEP MIXING. It'll seem too dry at first and then too wet. This is normal. JUST KEEP MIXING till a cohesive dough is formed.
4. Drizzle over some olive oil and rub it in using your fingers.
5. Cover with foil or a plate and refrigerate for 12-48 hours
6. Take out from the fridge and make sure the SIZE IS DOUBLE. If not, you have to start again. Pictures can help with this if you have a hard time remembering.
7. Put some olive oil on the dough and then stretch and fold it for about 7-8 times. Make sure to get a nice stretch at the top.
8. Get your baking pan and oil it lightly.
9. Cut up some baking paper twice its width and place it on the pan. MAKE SURE TO GET ALL THE EDGES.
10. Gently tip your dough into the pan. DON'T USE SPOONS.
11. Let your dough rest for at least 2 hours and up to 4.
12. Preheat your oven to 220c for at least 30 minutes before adding your dough.
13. Using your fingers, poke the dough aggressively till air bubbles form. Top with olive oil and salt (you can add olives too)
14. Place your dough in and bake for around 20-22 minutes or until the top is nice and golden brown.
15. Tip the dough carefully onto a wooden board or rack and let it rest for around 20-30 minutes. Cutting into it now will ruin the texture.
16. Enjoy!
17. Wrap in a cloth and place in a turned-off microwave or oven for storage. DO NOT REFRIGERATE.
(ROASTED GARLIC BREAD):
1. Cut off a slice of Focaccia and sear it in a pan with some butter.
2. When the slice is nice and golden brown, take it off and smear on some roasted garlic.
3. To make roasted garlic, cut off the head of a garlic bulb, place it on an aluminum square, drizzle over some oil and salt, roll it into a ball and place it in a 220c oven for 30 minutes.
4. Layer your shredded cheese over the garlic and finish with some salt.
5. Put it under your broiler (the top tray near your oven's heating rod) for 2-3 minutes or until the cheese is melted.
6. Finish with some olive oil and oregano and enjoy!
(ITALIAN SANDWICH):
1. Cut off two slices from your focaccia bread and sear them in a pan with some butter.
2. Generously apply cream cheese on one side.
3. Layer your bologna and pastrami on the same side.
4. Cut your mozzarella cheese into thick slices and place them on your meat.
5. Finish with some salt and oregano and place it under your broiler for 5 minutes or until the cheese has melted (Put your other slice on the tray as well to warm it up)
6. Take it out and finish with your honey. You can also add chili flakes at this point for an even deeper flavor.
7. Put cream cheese on your other slice and top your sandwich.
