Heston's triple is boil, (chill/freeze), 1st fry, 2nd fry. Cooling does not count as cooking. Three steps. This one is pickle, 1st fry, 2nd fry. Three steps too. I'd say it's almost same amount of effort.

you only need that fermenting vessel if you are going to make large batches...any normal amount I'm sure a 5 gallon bucket will suffice.

So you just leave them in the brine in the walk-in until you need them - that's bloody brilliant! No freezing required because they're fermented! I was looking for how to freeze them! Holy smokes!! Thanks for sharing!!

It’s been a long time since I’ve seen so much hate on a food video. The guy is hipstery, sure, but that doesn’t inherently make him a worse person. The fries are expensive, and while they aren’t super hard to make, they’re more difficult than most places fries and probably taste completely different. If you don’t want to pay for something different, don’t. I don’t see people hating on aged cheeses or blue cheese because it’s basically the same thing, but more expensive. I wouldn’t ever buy these, because I don’t live there and I don’t have the money to spend on fries like that, but if I did I would to have the experience.

Kian H as a result of the fermentation process, carbon dioxide and lactic acid will be produced. The airlock that he uses, allows that gas to escape the bucket, without letting air in, this is what the water is for, it’s basically a barrier. The idea here is to avoid air from the outside getting into the bucket , as it can bring harmful bacteria and molds which can spoil your vegetables. The less of that, the higher the chances that you will only have good bacteria inside the bucket doing their thing. Note: I didn’t say why it’s important to let the gas out. If too much gas builds up it will probably pop the lid, if you are fermenting in a glass container, it could explode. The airlock fix this problem

Brine pickled fries & smoked apple sauce are 8 bucks at this restaurant. Reasonable enough, especially since it's mission district SF. If you prefer Mickey Dee's volume for money go there.

Damn. I like the idea, but at the end of the day it's made of common russet potato and a pickling brine, which are dirt cheap peasant ingredients. They're making peasant food in a five gallon plastic bucket. They can easily add twice the amount of potato per batch and give the customer at least a medium sized plate of fries for $8. That portion is tiny, unless it's part of a five course gastronomical journey. That's fantastic if a restaurant can set high prices in a market that can sustain it, but pricing that plate at $4 ensures some volume and longevity in a trendy, touristy area. I guess it depends on the long term strategy of culinary institution versus a popup cash grab and move on to open another eatery focusing on the next culinary trend, rinse and repeat. Rewrapping and branding a food truck would probably be much more profitable than reworking a brick and mortar on a half year basis.

PBJ yeah I get that, I live in an expensive place myself. Not that expensive but it ain't cheap. And you still don't get 5 fries for 8 bucks. The prep time is too short to justify it. How are other prices in SF? Like let's say a Burger fries and soft drink at a non fast food chain restaurant.

Hmm I guess it depends on your terminology... pickling and lacto fermentation are definitely related, as the lactic acid bacteria responsible for the fermentation generate high proportions of, well, lactic acid - so basically, both techniques yield some kind of vegetable or root that's submersed in an acid environment. In a broader sense of the word this would mean that a lacto-fermented food could be considered a pickle. I guess the main difference with pickling in the strict sense of the word is whether you kill off or keep alive (a part of) the bacteria - with pickling, one usually heats the vinegar and pours it over vegetables in disinfected jars so as to minimize the bacterial growth, whereas fermenting encourages certain bacteria to grow, often with the use of a brine. TL;DR: it depends on how you define the word. But I do agree that the title of the video is a bit misleading...

Im far too lazy to do it, but if I ever opened a restaurant it would have customizable french fries. Im talking most any topping you can think of, and you could mix and match. Chicken bacon ranch fries, pulled pork bbq fries, chicken parm fries. Curly, wedges, think cut thick cut you name it.

actually pretty easy if you have ranch seasoning, bacon, chicken parm, pulled pork, on the menu already. after that you've really only got two or three other kinds of fries to deal with and in the end they all get blanched and fried up to order. Only one I've never done is curly, we don't have that machine.

Actually, those fries are 8 bucks which is a bit much for fries but why not spend some more to try something new. Things like fries should be treats anyways.
