I make Chicken,Bacon, Ranch Quesadillas for my wife and kids. I was just putting the Dry Ranch Mix on it to flavor the thighs. But i think ill use your marinade next time, minus the Jalapeño Juice. I get the pickled jalapeno juice needing the tang and vinegar taste, but as far as the jalapeños I love fresh, that’s the only thing that I would change
You have an option, which is to cook bacon the way your wife likes it. I have no option other than to cook bacon when my wife is not here. The kids love it cause they are normal. 😂

Fantastic video, brother. Everything about that cook was phenomenal. The rule at my house is, you eat bacon super crispy or you don't eat bacon. No other choice. I'm gonna have to give this one a try. Great video, my friend. 👍
Followed everything exactly except instead of layering it on as it cooked I mixed everything together in a bowl then spread it on! That was just easier for me though cause I’m blind and was easier to make sure everything was evenly coated. Personally don’t think it matters cause I now have to make them to feed a birthday party this weekend lol
Thanks for the great videos! I'd be very interested in hearing your experience with stainless steel vs rolled steel. I've heard you say you cooked on SS in the navy. There aren't many (or any that I can find) videos discussing the differences and I'd love to hear your take. It seems like SS would be more prone to sticking and harder to clean.
The jalapeño juice is magic! I made a gluten-free macaroni salad for my celiac daughter, and it was really pretty boring. I was looking at a jar of jalapeños and thought… well, what could it hurt. Added about a tablespoon of juice to about a pint of salad, and suddenly I had the best macaroni salad of my life! And you’re right, not spicy at all. Gonna give this a try tonight!
This looked so good at 5:00am that I'm changing up today's lunch! Already had chicken breasts, so ran to the Homeland store at 7:00 and picked up some Ranch packets and canned jalapenos. I am going to do the chicken kabob style on the Ol' Weber though. And then quesadilla-ize them as shown in this Vid. Thanks Bud!!!
Update: Absolutely delicious! And even my most spice intolerant family member was ecstatic. She wonders what else I'll be making with that same "seasoning"... Hmmm. Planning to do a nice pork loin for Memorial Day this way, and probably some ranchero or smoked baked beans as the main side. And some good old fashioned garden lettuce (the ol Midwestern "wilted" version). Y'all Rock!

Jalapeno pickling juice is magic. I think I mentioned on here before about doing Tri-Tip seasoned with Carne Asada seasoning and a whole large can of jalapenos and the liquid. Cook Low and Slow. So good. Absolute magic.
