To cook cabbage Provence:
Cabbage - 1 kg
Sweet pepper - 1 pc.
Carrot - 1 pc.
Garlic - 1 clove
Water - 100 ml (if the cabbage is not juicy)
Vegetable oil - 50 g
Sugar - 50 g
Vinegar 6% - 3-5 tablespoons
Salt - 1 tsp with a slide (to taste)
Bay leaf, black peppercorns - to taste and optional
1. Shred the cabbage. Add sugar and salt, mash cabbage. After that, the cabbage will secrete juice and decrease in volume.
2. Cut the bell pepper into thin strips. Grate carrots for Korean carrots or cut into thin strips. Chop the garlic. Add all vegetables to cabbage and mix.
3. Add water, vegetable oil. Taste and add a little more sugar, salt or vinegar if needed. You can also add bay leaves and black peppercorns for flavor.
4. Tamp the cabbage with your hand, put a flat plate and a load on top (for example, a tray or a jar of water). Leave in the refrigerator for at least 3-4 hours, preferably overnight.
