Youn’s Stay (윤스테이) Inspired Yul-Lahn Tteokgalbi (율란 떡갈비) Recipe (Traditional, Royal, Korean Dish)
Hey guys! We are back with yet another Youn’s Stay (Oscar winning Youn Yuh-Jung from Minari) recipe! This dish is definitely not the easiest or quickest recipe, but it is definitely one of the most delicious thing I’ve had in a long time! Ingredients:
Beef Short Rib
1/2 Cup Soy sauce (진간장)
1/4 Asian Pear
1/4 Fuji Apple
1/2 medium Onion
3 cloves Garlic
1.5 tsp Sugar
1/2 tsp Black pepper
20 pieces of chestnut, ground - steam for 1 hr
2 Tbsp Corn Syrup (올리고당) OR honey substitute
1/4 tsp ground Cinnamon
For the Garnishing:
Chives and 1 Korean Red Pepper
Citron syrup (유자청)
Vinegar
Lotus root, sliced
Fresh rice cakes, intended for tteokboki (떡복기)
Pine nuts
Directions:
1. Steam chestnuts on the stove for about an hour.
2. Rest for about 10 minutes until cooled.
3. Cut chestnuts in half and carve out the inside and place into a bowl. Set aside.
4. Cut fat off beef.
5. Slice beef and then mince/grind for about 30 minutes using 2 knives. Please be careful. Set aside.
6. In a cup, add onions, garlic, apple, pear, sugar, soy sauce, black pepper and blend using an immersion blender. If you do not have one, food processor or blender is fine.
7. Marinade the beef using 1/2 Cup of the marinade. Knead in the marinade for about 5-10 minutes. You can use the remaining marinade for other meats.
8. Using the chestnuts that we set aside earlier, finely grind the chestnuts through a strainer. We found that using a food processor helps speed up the process.
9. Add corn syrup and cinnamon to the ground chestnuts and mix well until combined.
10. Mold the chestnut paste into an a long shape.
11. Wrap the beef around the chestnut paste so that it is covered all around and there are no holes.
12. Place on baking sheet, and bake at 350 degrees Farenheit for 15-25 minutes (depending on if you are using a toaster oven or oven) then broil on high for 5 minutes.
13. Slice lotus root thinly, and soak in water. Dry thoroughly and fry it in a pot of oil. Then set aside.
14. Cut fresh rice cakes in half and pan fry with little to no oil until slightly crispy.
15. Combine halved chives, citron, vinegar, and thinly sliced red pepper in a bowl and mix well.
16. Plate and serve, enjoy!
