What YT means by "punch in" is "start from that bar i messed up on". What you're seeing is him mess up on the same part. Yes, people can write their own verse and be stuck in the studio session after session for as long as this takes. For good lyricists, doing a "one-take" is a flex. It's said people who "punch in" usually don't have the capabilities to do a one take. Imagine all the mistakes in real time... this track would be 2 weeks long.
