I made this pie this weekend. It was amazing, and other than having oil everywhere, (well I was nervous and trying to rush), it was very easy and I asked myself later why I was worried. Truly. It looks complicated, but it isn't at all. Just a lot of steps, but if you plan, and follow Dimitra's directions, all will be fine. I only made one substitute and that was thyme instead of mint. I didn't have any, and it is one herb I don't really care for anyway, but that was the only substitution. This recipe tastes so delightful. The filling is light and the filo is so crispy. My guests loved it. One asked for seconds and I was afraid I wouldn't have enough. Excellent video ! You are a very good instructor, and I appreciate this recipe and your efforts so much.

OMG - I found you a few weeks ago and have tried a few recipes. This pie is DELICIOUS! I also froze one and I thawed and cooked it and it turned out beautifully. Thank you so much for these recipes - SO incredibly good!

I made the Kolokithopita in a half sheet doubling the recipe and it turned out fantastic. Everybody loved it. Thanks Dimitra !!

It's funny that you said the corners that you tucked in were going to be crispy, crunchy, and delicious- like a regular pie... that's always been my favorite part on a desert pie or a chicken pot pie. It's the best part! I've got all the ingredients for a spanakopita right now. I got them the other day after I watched you make one without cooking the filling. Seemed more doable that way. I'll let you know how it comes out. And thank you for posting all these recipes and how to's. Cooking got fun again for me!

How delicious. I'm going to keep this one too & make it. Do you have a kolokithopita (pumpkin pie) recipe? I'm looking for the semi sweet recipe for that. I remember my late mum making it with raisins & walnuts etc... But silly me didn't get her recipe. I've seen a few recipes about but nothing like the one my mum used to make. I was hoping you might have something up your magic sleeve.

Looks like you really aren't hurting for uses for these zukes, I wonder if it would be a good addition to Spanakopita...perhaps not tradition, but I don't think that's too far fetched.

Thank you, question....on this video you said bake at 350° but on your website it says 375°, can you clarify....please, thank you in advance

To be safe, bake at 350. It just depends on your oven. Sometimes, I have to raise the temperature if it's taking too long...
