You'll need
2 zucchinis
2 tbsp olive oil
1 clove garlic
1 cup yogurt
3 tbsp strained yogurt
1/2 tsp salt
1/2 bunch dill
For the topping:
2 tbsp olive oil
2 tbsp crushed walnuts
1 tsp ground red pepper
Here's how
1- Grate the zucchinis.
2- Take about 2 tablespoons of olive oil in a pan.
3- Sauté the chopped clove of garlic. Add the grated and squeezed zucchinis.
4- Continue to sauté the zucchinis over medium heat, stirring constantly until they release their water.
5- Once the zucchinis lose their water, remove from the heat. Transfer them to a wide plate to cool faster.
6- In a deep bowl, take yogurt, strained yogurt, and salt. Whisk with a wire whisk until smooth.
7- Add the cooled zucchinis.
8- After adding about half a bunch of chopped dill, mix all the ingredients thoroughly.
9- Transfer to a serving plate and smooth the surface.
10- Heat olive oil in a pan. Once the oil is hot, add the coarsely chopped walnuts and ground red pepper.
11- Drizzle it over the zucchini yogurt dish. Your dish is ready to be served. Enjoy!
