Zurbian rice is a yemen recipe, which is served for occasions like Eid or weddings, this consists of spices infused rice with tender juicy marinated chicken or lamb in arabic flavours and spices, which is then slow cooked (dum) to perfection. Happy Cooking!

Frying Onions
Olive oil - 1/3C
Onions - 3 medium chopped
Cooking the rice
Water - 3L
Basamati - 3C
Salt - 1 1/2 tbsp
Bayleaf - 1
Star anise - 1
Cinnamon - 1nos
Cardamom - 6
Cloves - 6
Mace - 1
Black lime - 1
Oil - 1tbsp (reserved oil)
For marination
Fried onions - 1/2
Ginger - 1"piece
Garlic - 20 nos
Curd - 1/2C
Paprika powder - 1/2tsp
Cashew nuts- 1tbsp
Raisins - 1tbsp
For masala
Bayleaf - 1
Onion - 1
Capsicum - 1
Tomatoes - 2
Black lime - 1
Turmeric powder - 1/2tsp
Pepper powder - 3/4tsp
Coriander powder - 3tsp
Arabic garam masala - 1tsp
Green chillies -5
Potato - 5
Salt - 1/2tsp
Coriander /parsley - 1tbsp
Stock cube - 1
Saffron - a pinch
Orange blossom water - 3/4tsp
