Ironically, pure versions of the ingredients would lack the contrast of it's natural counterparts. It is this contrast that makes things flavourful. Plus sugar that pure would actually have a harder time dissolving and the pure water lacks any flavour as the minerals in natural water would be a bit of extra taste.
