After boil just shred the chicken with hands and simply deep fry the chicken and then add your spices or whatever. No need fancy smoked bs

Roast the meat on fire or stove first then cook the meat, use sichuan pepper and dried bamboo, of course ginger garlic chilli grinded is must, use grinded tomato after peeling it's skin and add a little bit light soy sauce (salted). This are the key tips for better pork - thank you
