That is NOT what nappe means. It has to do with the consistency of the sauce coating being thick enough to not drip off of something (generally the back of the spoon is used to test this)

Papalo is very acidic by itself. Its best used with meat such as beef or chicken. It gives a great flavor and the acidic properties maximizes digestion.
