It's been a long time since I've had chicken rice in Thailand. But from what I remember, Singapore chicken rice more tender and more rich flavor. He will be a big fan of chicken rice in Singapore!
The biggest difference I feel is the sauce. Khao Man Gai is served with a sauce that combines fermented bean sauce (tau cheo) and chillis that's thicker in consistency, whereas in Singapore and Malaysia you're more likely to be served with different options of red chili sauce, ginger sauce and dark soy sauce that you can mix and match to your preference. In Singapore, a common practice is to place the chicken in an ice bath to give the skin a more gelatinous and crispy bite, which also prevents the chicken from overcooking. Whereas the Thai style tends to cook through the chicken more, so the meat tends to be dryer. For sides chicken blood is common in Thailand, whereas in Singapore and Malaysia liver, gizzard, and soy eggs are the common optional add ons. Overall they belong in the same dish family for sure though, pretty confident you'll enjoy both!
For the fried Hokkien Prawn Noodles the calamansi is meant to be squeeze into and mixed with the noodles. Some stalls will give you sambal chilli instead of cut chillis and it depends on how you want to use it, for dipping your prawns and squid or mixed with the noodles but leave out the accompanying soya sauce, it's not vinegar. Enjoy!
Do try Hakka style Yong Tau Foo when you are in Chinatown area..People's Park Hawker Center has a few popular YTF stall..Yong Xiang Xing Dou Fu(永祥兴豆腐)usually has the longest queue. Poy Kee (培记釀豆腐) and Koo Kee ( 高记釀豆腐) are just as good.

kura sushi is absolutely dogshit and overhyped. sushi fish tastes like a thin meaty slab of nothing and sometimes still frozen. I saw a lot of RU-vid videos promoting it so I went to try it, there was a long queue and the sushi was absolutely horrible. dont fall for it.
