Instead of cocoa powder can we use cacao nibs. If so how to mix. Do we need to add melted Cocoa butter in cacao nibs and grind. And also can I use Honey or Maple syrup. If so will it affect shelf life.
My butter was past the expiration date and smelt rancid but I didn't check that until after I finished the steps, so now I have butterless vanila-less ganache but it is still tasting good.
