Thank you very much because I wasn't sure if you had to peel the fresh asparagus or just cook it the way it was out to come out of the garden. We have been having asparagus growing in our garden for years because once you plan it just keeps coming back every year. But my wife cooks it it's like eating cooked weed now I know the proper way to do it.

I agree that it wastes a lot of the avacados “meat”. I hold the avacado in the palm of my hand. Then with a spoon I make slices horizontally and vertically. Next I scoop out the insides with that same spoon and falls out in many thin slices all ready for mashing.
The thing is that this caramel was cooked dry (without water) and I guess crystalization doesn't happen unless cooked wet (with water), stirring it in such case would likely result in the sugar hardening like that.
I shaved my brussels sprouts, then I was afraid they would get razor burn, so I tossed them in aftershave. Ruined the salad. Next time I made this salad, I simply julienned them. They came out perfect.
