Baking soda helps it keep its shape & prevents from burning if your oven is wonky

You might get weirdly flat edges from where the item sits on the pan directly if you don't use cornstarch or baking soda underneath. It WAS a lot of it in the video. I assume that was more for visual effect than anything. You wouldn't need that much for one piece you are baking.
