It's not by choice, unfortunately a lot of coffees we purchase sell-out within a few minutes to a few days. There are exceptions, but, couple with the fact that *most* coffees require minimum 14 days of rest and 24 days to go through a review, and very few coffees remain available in that timeframe. That's why the COTM exists and we've been attempting to promote more coffees as they are available in preparation for upcoming reviews
Haven’t seen you this ecstatic over a coffee in a while! Tasting wheel even speaks for itself. I got a sample of a July roast and it was so lovely I was getting tons of bright strawberry acidity with a sweet tangerine finish. I did feel that I didn’t push the coffee hard enough but luckily I have 2 more doses of an August roast.
Definitely consider yourself lucky to have those samples, this one at its best is a stunner. There's usually a few coffees each year that we rate this highly and it's always such a joy to review them. Credit to H&S again, doing amazing work
Oof, yeah..... Think a lot of people enjoyed the Deborah Bourbon, but this one has had some immensely positive feedback from what we've heard as well. On paper, it was tough to select one initially as they both sounded good.
Much appreciated on our end but it's still unfortunate to hear how many were effected by the issues purchasing from Mood Trap. Hope it gets solved soon

@manuscriptmastr had mixed thoughts on it initially (250g of pizza coffee is a bit steep) but the entire pack at 125g of each sounded passable (and certainly great content). Snag yourself at least a cup or sample if you can, it's something.....😅
@ricard3851 believe we'd introduced it in one of our monthly recap videos earlier last year, but we purchased a bunch of deep metal tons and stored *most* of the coffees we have in them. Other than that, we do get vacuum-sealed coffees from people semi-regularly and a lot of those are stored as is. Often joke that our freezer might have stuff that's extinct like Manhattan's original run of Pepe on the probat and Coffea Circulor's collab with Pepe too 😁
Happy to see you mention intensity/concentration. Wish more roasters tried to convey that kind of information beyond occasionally being able to interpret it from the cupping score.
The Goût and Co coffees we're working on chart the intensity of their coffees on their bags. It's been really helpful as it actually gives a good idea whether or not we're executing the coffees the way they're supposed to be. Appreciate it though, intensity is definitely an extremely important part in the experience of the coffee

Happy to see this review finally posted. I received my bag a little while ago and I threw it in the freezer right away. It was on day 28 when I froze it. Perhaps the key is letting it rest into the 40-50 day range? I'll be brewing it on the V60 and hario switch. I'll tinker with the ratios and hopefully be able to bring out the best of this coffee.

This review was recorded yesterday because we'd received the coffee a little later than we'd have liked that so we had to expedite this review. Just trying to figure out the time-line because I figure there was probably only one run of this coffee and we're probably working with the same one. Either way, wish we had better tips. We will be working on it even post review to try to get some good suggestions. Imagine that the coffee will settle down on the fermentiness with time if you have the patience
@@CoffeeReviews Sorry, typo. Day 18 when it went in the freezer. Had to freeze it then without enjoying a single cup as I've been on the road and won't be back home until early next month. I suspect you are right in that the fermented aspect should tone down with time, so I will let it rest a while more before I start brewing. It really is too bad there are no brewing tips included with the coffee or anywhere on the website that I could find. That would have been massively helpful.
Only had 3 brews of this coffee but I think we still had pretty similar experiences! Botz as of late seems to be so interesting with people’s thoughts seem to vary A LOT. I personally preferred the Tuke Yute to this but I had very little to play with. IIRC you got a sample of the Duncan Panama? Curious to know your thoughts since I just brewed both Panamas this morning.
@allen.t would have personally loved to have tried all the coffees from that release but we've been doing plenty of Botz content recently. As far as Duncan goes, it's still sitting in the freezer. We have quite a few fun/interesting samples that we kinda want to toss them all into a blind taste test video if we can
The Deborah Iridescence has been one of the best bags I have had this year. Coulter told me he will be visiting Savage during the next harvest. Always looking forward to coffees Savage produces.
We're already looking forward to that review coming out next Monday. It's unfortunate that it's gone because I think a lot of people might have been as impressed as it sounds like we were....
Oh, it is? I assumed it was actually sold out! Consensus on this one seems to be so much praise for that coffee. Anyone reading these comments should grab it while it's still available.....
i think i almost had each of the savage coffees this year (echo, enigma, elipse, anthem, terroir, iridescence) they were lovely and gentle but a little toned down to what i expected of them (at least on the delter colddripper) i would characterize them mostly lovely yet gentle. also i believe all of them are still available on coffeacirculor
@andrewsmithty curious who you had Iridescence from this year? I would certainly describe H&S as being lovely and gentle, but it had very nice intensity to it as well. Would love to try out the Coffea Circulor ones of all of these coffees but the combination of cost and how many Coffea Circulor coffees we've reviewed this year is the only sticking point....
I really struggled to dial this one in. I think I only got one excellent brew and one or two 'good' brew throughout the whole bag. The rest were overly soft florals or some cereal notes. Bit of a shame, but at least the one brew was spectacular.
@pauldaplayfulpanda3042 appreciate this feedback as, you're right, it wasn't the easiest coffee to figure out. Some cups were far more intense than others and there was always something different with each sip. A lot of the reason we had a preference to the Iridescence was because of its consistency. Appreciate the feedback 🙂
You're correct. Will happily give credit to them on a very nice transition. As far as roasters go, they've done one of the best jobs of making that shift 👏
This was one of the defining coffees for me realizing that there is a "too light" for my preference. I, too, found it very quiet and lacking some depth. When it was at it's best I enjoyed notes of nectarine, raspberry, a hint of honeydew, and green grape. However, this coffee does help free me up to know that sometimes the most hyped coffees can be... outside my taste.
Also, regarding the savoriness, I think that could be influenced by the rest on this one. I found it to open up and have less of that savoriness around two months.
Which I always felt like was an interesting revelation from you as I'd known you to be a big fan of the Picky Chemist up to this point. Like with all things, there are probably plenty of coffees where this profile works well while it seems to struggle with others. Haven't heard many raving about this one this time around. When going through the notes (and recording the video) we wondered how much our feelings on it would be mirrored by others. It was interesting to see that a lot of people shared this sentiment
@@CoffeeReviews It's true! I have greatly enjoyed a lot of Picky chemist in the past, and I still enjoyed these, but the contrast provided by roasters like H&S helps to illuminate what is possible in this ultralight realm.
Thanks! I have purchased two different coffees from him not this one, but i am feeling that the coffee doesn't meet my high expectations. Might be I am not brewing it correctly but mainly I cannot get a nice flavour separation. Despite this nice coffees but nothing outstanding for me.
You've probably also heard rave reviews about them as well and they're not always the easiest to work with. A lot of it felt like there was potentially more to it when that was it. Appreciate hearing that we weren't/aren't the only ones that feel this way with some of his coffees, cheers ☕️

In parallel I had a similar Pink Bourbon from Manhattan and I got much better things of it. Might be my fault but similar with two coffees.

As always, have a little bit of this one left and hoping to revisit it soon just to see if maybe it required a very extended rest, but also heard a lot of people voice their own issues with it after we'd recorded the review. Super nice surprise that you reviewed this one! I came across this coffee in a small coffee shop in Prague on batch brew a couple weeks ago, and I was extremely impressed. Outstanding berries and current aromas with little savory flavors. It was so sweet that it reminded me of brown sugar. They didn’t have any bags for retail but the barista offered to weigh 100 grams for me to buy

This was very nice around the 30 day mark and kept getting better until I finished my bag (around day 90). At its peak, it was perhaps one of my favored washed coffees ever.
For this coffee roster, I lost all my interests because my orders through their website are Never fulfilled, even though payment were credited as orders were placed. Several emails back and forth over months requested the update but no positive feedback. I strongly suggest to be very careful regarding the orders you placed.
So exciting to hear that this was your favorite picky chemist coffee! I enjoyed it a lot. I got the dense, sugary strawberry with a little bit of that raspberry. It must be my setup, but I actually got more chocolatey notes. By the end it was very reminiscent of a chocolate dipped strawberry. chocolatey light roast, always fun!
They’ve become on of my favorite roasters as well… I’m resting the Altered DNA expressions 4 pack now and have the Mystery coffee on the way. Wish I had picked This one up as well…
Well, spoiler for everyone that reads the comments, but we also picked up all 5 of those coffees as well and all of them are currently resting too. We're considering putting them all in a blind taste test video so we can record our first reaction to them as well. H&S are doing an amazing job right now
H&S is easily top 3 roaster of the year with their releases just being so consistent I have yet to hear a bad thing about them. Didn’t get my hands on this coffee but the most stunning coffee I’ve had from them recently was the Santa Librada washed PB which was an absolutely incredible roast. Cant wait to try all 4 eths they’re offering atm.
Couldn't agree more, they've shot up so favorably with us to the point where we have to restrain ourselves from picking up too many of their coffees. Heard great things about that Sants Librada (and pretty much every coffee they've had recently). There's no doubt those Ethiopians will hit the mark.
had a coffee from the same producer roasted by minmax, was very much a "comfort coffee", nothing exciting, but nothing to complain about either. edit: sounds like a very similar coffee to this one
Appreciate the feedback on that coffee, actually, as we'd looked at it a couple of times when picking coffees for our Coffee of the Month poll and would have picked it up had Mixmax been in/won one of the polls. A side-by-side would have been great too
Have only recently subscribed so I apologize if you’ve answered previously: do you freeze beans? Or when you mention 56 days is this just resting in the bag the entire time? How do you store when you open a bag say at 21 days and are keeping it out past 50-60 days?
Welcome. We do freeze beans, but not during the timeframe of a review. The reason we don't is because we need to let the coffee naturally degas/change over time and freezing it would stunt that. We follow Coffea Circulor's guide here (coffeacirculor.com/pages/guide) which essentially states to leave it in the bag in a cool dry place
Just a bit of clarification, favorite that we've had recently or favorite all-time? We do a monthly recap each month where we highlight our five favorites that month, and, at the end of the year, we do a top 10 coffees of the year list
I’ve only had experience with like 30g of TPC coffee (white honey el placer) and I absolutely loved it. I just purchased my first bag from the most recent release (GV lot #24/E17 ultralight) and I’m a little shocked that it didn’t get wiped out as fast as last time. Curious if people are getting priced out from the coffee itself or the shipping or any other reasons beyond that.
Interestingly, with the exception of the Alaska del Sur, a lot of the feedback we've heard on the recent release of coffees has been mixed. General assumption would be that there are so many high end offerings on this release so it's hard to know which ones would be best. Either way, it's a great opportunity for someone (like yourself) to try it
Thank you for review. I actually ordered this coffee a few days ago. I got the feeling that this coffee needs plenty of rest time before it starts to peak. I went with the Omni roast. I usually wait 3-4 weeks before start brewing Nordic light roast. Do you think I should wait till week 5 before starting to brew this coffee? I actually asked the picky chemist if he could recommend me a coffee there is clean and not fermenty and he recommend me this one. I’m not that found of heavily processed coffees
They're actually slightly different lots, but they'll likely offer enough similarities that you'd see similar results. The lighter versions we usually brew at the 4 week mark bit have seen it start opening around 6 weeks, so we'd imagine the omni might be a slight bit before then (4-5 week range) Have found better results with most of the Picky Chemist's naturals. It's been a good year for naturals as well, so there's a chance this one should hit that mark. Cheers ☕️

I was surprised to hear a good amount of people didnt have a great experience with this coffee since I loved this coffee. I only 45g of it but every brew I had was so fire. Bitter at a level 3 was a shocker for me since I detected little to no bitterness. I’ve really enjoyed the past 3 chirosos I purchased recently.
You're just better at brewing 😉 Interestingly, someone brought it up to us while we were in the middle of taking notes, which validated a lot of what we'd experienced up to that point. Still won't put words in Christopher's mouth but it *sounds* like it wasn't quite what he was hoping for either. Either way, all that matters is you enjoyed it 🙂
