Bubblegum! Brilliant. It hadn't occurred to me. A great note to represent a lot of attributes related to this variety, this profile, and early rest. I will keep it in mind! My fun story for this coffee -- I asked for 45kg but only got 15. La Papaya vastly overestimated their yield, being only their 2nd or 3rd year of harvesting Gesha. I was fortunate to get any. 15kg is barely 4 batches for me. I like to expend 1 batch, if needed, to perfect the profile. But with so little of this lot, I really needed to nail that first batch! Once I'd roasted it, I dreaded that I went too light. As soon as it dropped, I was planning the next batches to go darker. Day 1 QC seemed to confirm this. Day 2, however, something snuck out to me, that sweetness, just barely peeked out. I decided maybe it was ok, and to replicate the profile for the remaining 3 batches. I'm so glad I did. Deciding a profile on 1, 2, 3 days rest takes a lot of trust in what the coffee is telling me. I brewed a cup of this after watching your review. 90 days post roast. The bag has just been sitting on my counter, maybe 30g is left in it. It was sublime. The sweetness especially jumped out. It lost nothing. It was wonderful to return to. Too often, because of my release schedule, I have little time to enjoy my coffee before I have to turn towards profiling the next one. I was very happy to take a few minutes today to enjoy my previous effort. Thank you--

And thank you for this gem, it's rare these days that a coffee elicits this sort of praise. The profile felt ideal for how this one turned out and it's great you stuck to that. Others seem to agree too as the feedback we've heard has been universally positive. Keep it up, this is truly impressive 👏

Genuinely hope they bring it back in the future so those that missed out can get a chance. To be fair, even we didn't expect that it was going to be *this* good

Washed geshas in particular tend to have a sugary grain quality that is often reminiscent of cereal, so it's going to be those geshas usually

I enjoyed this coffee but found myself reaching for the mejo more often. Watching your video helped me to understand the flavor profile better as always. The lilac reference makes sense, but I struggled to identify the floral note. Very pretty coffee

We often credit Heart for the ability to differentiate a lot of floral characteristics because of how their Ethiopians were back in the day. Unless you know a bit about flowers, it can be quite tricky. Both of these coffees felt well executed and it definitely came down to preference. Appreciate the kind words and feedback, cheers ☕️
