When I make pita (in the oven) sometimes nice puff, sometimes half, sometimes not. From this video I learned to make Pita in the pan: first flip when you see small air pockets. Wait till a little bigger pocket, flip again. Now they will puff up every time!

Back six years ago, there weren’t that many videos showcasing Ethiopian cuisine. When it came to injera, only Mali’s video existed. When I played the video the first time, I remember being surprised that Mali was Israeli and dictating instructions in Hebrew. How cool was that??
