I plan on doing it in the closet and she chills there a lot, 2. What % can I get this to? 3. When doing this I think I got impatient and drank early it had clumps of yeast how do I prevent this? 4. What juice is best?
8-10% ABV. The clumps of yeast are part of the process. It's called flocculation, give it some time and it should clear up. It doesn't really matter what kind of juice you use as long as you like it.
